If you ever catch the train into Saint-Emilion, you’ll notice that it runs through the heart of the region’s vines. Just behind the station, on the outskirts of the village, lies Ch. Haut-Simard – an unassuming property that just happens to be owned by the Vauthiers – the same family that is behind Ch. Ausone, one of the region’s most famous estates. Over 15 years after the Vauthier family took over the estate, it’s emerging from the shadows – proving just how good a site it is.  Ch. Simard and Haut-Simard – both owned by the Vauthier family today – were once part of the same property, which dates back to the 16th century, named by the Simard family in 1865. When the railway line between Libourne and Bergerac was built in 1870, it ran straight through the vineyards and divided the estate in two. The railway slices across the foot of the slopes of Saint-Emilion, neatly dividing two different terroirs. North of the railway line lies Haut-Simard with more clay and limestone, while the larger Simard lies to the south on sandier soils.   In 1917, the four hectares of the original Haut-Simard were purchased by Leonard and Charlotte Gratadoux. They built a new house and cellar in 1929 – which is still in use today. Claude “Coco” Mazière – Edouard Vauthier’s great-uncle – bought the winery and 10 hectares of vineyard in 1954, the original Haut-Simard and a slice of Simard. Gradually he acquired the rest of the Simard estate and expanded Haut-Simard, with the two estates growing to 50 hectares in total – and, although the two wines were long made separately, from the 1990s Mazière put all the fruit into Ch. Simard.  Great-uncle Coco managed the estates through to his death in 2008. “He passed away almost in his office,” Edouard tells me – emphasising how Mazière worked almost obsessively to the end of his days. When he died, Alain Vauthier – Edouard’s father, who was already responsible for Ch. Ausone, Ch. Moulin Saint-Georges and Ch. de Fonbel – inherited the Simard estate.  “Look at the maps of the soil and look at where Ch. Haut-Simard is, it’s sand, a little bit of clay and a little bit of limestone – it’s a terroir totally suitable for Cabernet Franc,” Edouard explains. “When you dig a little bit, you realise the water table is 10-15 metres below. It’s very deep and very good soil that can produce a great wine.” Indeed, look at the property’s neighbours and you’ll find some illustrious names: Canon-la-Gaffelière, La Gaffelière, Pavie and Larcis-Ducasse are all a stone’s throw away. Haut-Simard may be a mere seven or eight metres above sea-level, but it’s enough to separate it from the flood plain where much of Simard sits.  Realising the potential, Alain decided to separate Simard and Haut-Simard once more (re-introduced from the 2008 vintage) and set about an extensive replanting program for the 10 hectares of Haut-Simard, putting in swathes of high-density (12,600 vines per hectare) Cabernet Franc in 2008, 2009 and 2010. Where the Haut-Simard vines once had around 80-85% Merlot, now 70% of the vineyard is dedicated to Cabernet Franc – focusing on quality rather than quantity.  Little has changed in the winery since it was built in 1929, and the team still uses the original concrete tanks. The fruit is all picked by hand, with density sorting now routinely used, spending around 20 days on skins, with délestage (rack and return) favoured over punch-downs/pump-overs to allow for gentle extraction. Once pressed off, the wine spends around 14 months maturing in around 20-30% one-year-old barrels and the rest in concrete.  As so much of the vineyard was ripped out, volumes were tiny in the Vauthiers’ first few vintages. Fruit from the young vines started being introduced from 2014 and the blend has continued to shift, with the 2022 the first to contain 70% Cabernet Franc. “It changed totally the game,” Edouard says – explaining how they’re finally seeing the fruits of their labours. Even now, only 2,500 cases are produced each year.  For Edouard, the Merlot on sandier parcels brings notes of strawberry, while on limestone it adds liquorice, complementing the Cabernet Franc’s dark fruit and green bell pepper. That dark fruit has built with each vintage as the new plantings come into the blend and vines mature, lending additional texture and structure. The average age in the vineyard is just 15-16 years now, only set to offer more as it matures. This might be a modest wine, but it’s one that has more than enough capacity to age. “I’m sure it will last 15 years with no problem,” says Edouard.   Tasting through a handful of vintages, it’s amazing to see the evolution of the Haut-Simard style -from the more solid 2016 through to the linear, bright, elegant 2022. It’s a wine that has impressed us en primeur for the last couple of years too – punching far above its weight.   Tasting Ch. Haut-Simard  2016 Ch. Haut-Simard: Plummy, sweet and round, this is full-bodied and concentrated, with real density to the fruit on the palate. It’s fresh, with a saline finish, yet there’s a solidity to this, not having the precision, brightness and aromatics of more recent vintages. Blend: 65% Merlot, 35% Cabernet Franc  2018 Ch. Haut-Simard: The nose of the 2018 Haut-Simard is instantly more expressive than the 2016 – combining red fruit and an herbaceous note with a toasty sweetness. It’s more linear on the palate. The intense core of fruit is rich and tightly packed, framed by grainy tannins at this relatively youthful stage. The finish is long and savoury, with a hint of blackcurrant leaf. Blend: 70% Merlot, 30% Cabernet Franc  2019 Ch. Haut-Simard: Floral, lifted and aromatic – the 2019 Haut-Simard is a world away from the previous vintage. Dainty berry fruit – blackcurrants and redcurrants – lead to an elegant, fine-boned palate. It’s precise and juicy, lithe and balanced with fine, chalky tannins. Blend: 60% Cabernet Franc, 40% Merlot  2022 Ch. Haut-Simard: The 2022 is the unashamed star of our mini-vertical of Haut-Simard, and the vintage Edouard Vauthier points to as a fulcrum point for the estate. The nose is sweet and bright, packed with seamless red berry fruit, along with hints of florals and pencil shavings. It is the palate that is so striking, however, driven and long, linear with graphite-etched tannins and mouthwatering acidity. Vibrant, pinpoint and very, very good – especially for the price. Blend: 70% Cabernet Franc, 30% Merlot  2024 Ch. Haut-Simard: The nose is perfumed, with intense cherries and lifted florals. There’s a lush intensity to the palate, with a mineral line that sup ports the fruit and complements the bright acidity. There’s lovely concentration here with fine tannins that provide a fine-boned framework. 12.7% and 3.74pH. Shifting gears at Ch. Haut-Simard   

“Time is necessary,” Paul-Etienne Defaix tells me. He should know – he is the 16th generation of his family to make wine in Chablis – and, at Domaine Daniel-Etienne Defaix, time is everything.  Wine has been made at the Domaine du Vieux Château (the property’s historic name, which still features on the labels today) for eight centuries, and under the Defaix family since 1610. Much has changed in Chablis over the past 400 years, however – and today the estate is a last bastion of the Chablis of yore.   Demand for Chablis was booming by the 1970s, and producers reduced the élevage (the time wine spends in barrel or tank), bottling, releasing and selling the wines earlier. These modern wines, often bottled within six to 12 months, were lean and crisp, but for Paul’s father Daniel-Etienne, they were disappointing – lacking the complexity and ageability of wines that spent longer on their lees (the dead yeast cells). Daniel-Etienne decided to do things differently – to return to making wine the way they had in generations past – and the family hasn’t looked back.  Generally, their approach is to let the wine be – waiting, watching and waiting some more. Fermentation is all with indigenous yeast and notably slow, taking up to six months, with malolactic fermentation left to rumble along on its own timescale, only finishing after up to two years. Their Premier Cru wines then spend up to nine years on their fine lees, while for the Grands Crus it can be up to 15 years, kept at a cool 10-12°C.  During the wines’ extended élevage, autolysis takes place – the enzymatic breakdown of the dead yeast cells, or lees. It’s the same process that takes place in Champagne and other traditional-method sparkling wines aged on their lees, and is the key to the Defaix – and once traditional – style of Chablis, giving the wine a rounder mouth-feel, and lending bready, toasty complexity. It is also, for Paul, “key to revealing terroir”. Although the tiny volumes of Defaix’s Grands Crus and Pinot Noir go into oak, most of the wines are aged exclusively in stainless steel, meaning it is only the site and time that you taste in the bottle. Once deemed ready, the wines are bottled and released into the world.  Ageing its wines in stainless steel tank for not months but years, Defaix creates textural, complex wines that are only released as they reach their drinking window. It is a rebellion, Paul tells me, against “a society of rapid consumption”.  Paul is now in charge of the property’s vineyards and winemaking, although his father is still involved in the business. Paul studied in Beaune, getting experience at a handful of estates – largely focused on Pinot Noir – before returning to the family domaine, working his way from the vines to the cellar. As Daniel-Etienne told him, “You need to learn your soil, your vines, then you can make the wine – and then you try to sell it.”  And, although it’s often the style of winemaking that steals headlines at Defaix, the domaine has some remarkable vineyards. The family farms 28 hectares in total. It has two Grand Cru parcels (0.15 hectares in Blanchot and 0.3 hectares in Grenouilles), but it’s the property’s Premiers Crus that have built its reputation – with four hectares each in Côte de Léchet and Vaillons. From these, they produce three wines: their Côte de Léchet, Les Lys and Vaillon. Importantly, the latter is Vaillon, not plural Les Vaillons – their parcel lying in the historic heart of this Premier Cru, prior to its expansion in 1976. Les Lys is a cooler climat within the larger Vaillons, and is often our favourite of the range, while the Côte de Léchet is drastically steep – with a 45% gradient.  The remaining hectares are largely dedicated to the estate’s village Chablis – their Vieilles Vignes. These vines are all over 45 years old, but some are very old – own-rooted, having survived phylloxera and now 145 years in age. When I ask Paul how this half-hectare has managed to survive ungrafted, he pauses, before saying: “I think God prays for these vines.”. They crop a mere 15hl/ha, but produce beautiful fruit (“For my bank, it’s bad; for my wine, it’s perfect!” Paul jokes) – and are now used for massal selection across the estate.  The final piece of the property is a tiny section of Vaillons planted to Pinot Noir, which is bottled as Bourgogne Rouge (as the land is only classified for Chardonnay production). Comprising less than a hectare, these vines too are ancient, planted in 1900, and still on their own roots.  Their spacious cellars are stocked with back-vintages, carefully maturing – a bank of wine that eases the vagaries of each specific growing season, protecting them from dramatic drops in yield – something that is a constant threat in Chablis. Take 2024, a year that was challenging across much of northern Europe with its wet conditions and high disease pressure, but in Chablis also brought hail that devastated huge swathes of vineyard – including Vaillons.  Global warming might have made it easier to ripen grapes in this marginal region, but it’s also made for more extreme conditions – highs and lows that keep producers on their toes. It’s also, arguably, made Chablis a little less Chablis. With riper fruit, the wines are less steely, taut and lean. Harvest dates are inevitably earlier, Paul notes, to preserve acidity and retain Chablisien backbone, but he also emphasises that the fruit requires not just sugar ripeness, but phenolic ripeness – to give dry extract and allow the wines to age. For him, working with old vines and low yields is key – both to phenolic ripeness and to preserving Chablis’s style.  The 2014 vintage – the first that Paul made – has finally just emerged from the cellar, over a decade after it was produced. Inside Burgundy – Jasper Morris MW  Published just in time for Christmas, Jasper Morris MW’s first instalment highlights how 2023 is “not like anything [he has] seen before” – with the largest crop on record, and the hottest year but the wines are not those of a hot vintage. He notes that “the white wines in 2023 are delicious”, accessible early and largely will be best drunk before the 2022s, with some notable exceptions with “the tension and tenacity to become really interesting”. It is, for him, “a very good white wine vintage, but probably not a great one”.  He deems the Pinot Noir more mixed, with “some absolutely lovely wines and some which just miss” – but most are “absolutely charming in an agreeably juicy style”. He has found a mysterious fault in some of the reds of the Côte de Beaune, lending an earthy taste and texture on the finish of the wines – and he has not rated these wines at this stage, choosing to revisit them in bottle. But, he emphasises, “don’t let that […] spoil your appreciation of all the other wines from this vintage” – with “delicious, fruit forward wines for medium term ageing”.   As for his early look at Chablis, he acknowledges that the region has changed – with the modern climate producing softer-styled wines that are “more fruit forward at least in their youth”, although “the best examples will absolutely still have the core character beneath”. While the generous yields of 2023 might be reminiscent of 2018, the wines show none of the dilution sometimes found in that vintage. The vintage is “more about pleasure than long term classicism”, he says, with the wines “charming, open and mostly well-balanced”, but the best will keep.  Read all Jasper Morris MW’s coverage and explore his notes and scores on his site (subscribers only)   Burghound – Allen Meadows  Allen Meadows started with his report on Chablis, the Mâconnais and the Chalonnaise. He highlights how the 2023 growing season was drastically different to that of 2022, and yet produced wines that are not a million miles away in style. He feels 2022 is better than 2023, “but not drastically so” – and states that when it comes to terroir transparency, “2023 might well have the edge”. The vintage is “a mixed bag”, he argues, with the reds more consistent than the whites, but with some excellent wines of both colours. For Chablis, he highlights “on the one hand, 2022 is a better vintage from a quality standpoint but 2023 is more interesting from a terroir standpoint”. He notes that the wines will be approachable young, and their natural balance will allow them to age well over the short and medium term. And, as Meadows says, “while there are certainly indifferent wines in both colours but when they’re good, they’re more than deserving of a spot in your cellars”.  For the Côte de Nuits, he acknowledges that the quality is “really variable”, with yield management the main driver in quality. There are, however, “many aromatically elegant, charming, and seductive wines” in 2023. The style, with “pliant tannins, good terroir transparency, and genuine depth of character”, is one that appeals to Meadows. Although the year is not consistent – and there are “plenty of disappointments” – there are also “good quantities of really lovely wines that should provide for delicious drinking early on yet be capable of amply rewarding mid-term cellaring”. The wines are not as concentrated as the likes of 2005, 2010 or 2020, he notes, but that doesn’t mean they’re dilute. He is one of many to emphasise 2023’s “charming” character – but without drifting into “banality”. The wines “belong in any serious Burgundy collector’s cellar” and the best are “genuinely wonderful for their sheer exuberance”.  Explore Allen Meadows’ reports, notes and scores on the Burghound site (subscribers only)    Decanter – Charles Curtis MW  For Charles Curtis MW, the 2023 vintage in Chablis is clearly good – just a touch behind 2022, earning a four-star rating (out of a possible five, versus 4.5 for 2022). He emphasises how important the harvest date was this year with the heatwave, key to preserving acidity, and this alongside yield control defined success. He emphasises that the Grands Crus delivered excellent quality, while Montée de Tonnerre and Vaulourent were stand-outs among the Premiers Crus on the Right Bank, while Montmains (especially Butteaux) and Vaillons delivered on the Left. The best wines, he says, sit alongside 2018, 2020 and 2022, “with ripe orchard and stone fruit, a lush texture, balanced acidity and plenty of extract”. They may not be as racy as the Chablis of yesteryear, but Curtis suggests that the best will age similarly to the 1999, and it is “a vintage that’s eminently worth stocking up on”.  Following on from his pre-Christmas Chablis focus, Curtis has published his full report on Burgundy 2023 – rating it four (out of five) stars for both red and white. With the challenges the year posed, he feels it’s less consistent than 2022, but still “a very good vintage”, with rare occasions where it’s “truly superb”. The wines are generally “very ripe” and approachable, with a “lush, drinkable style”, although he doesn’t feel they have the structure for long ageing, sitting just behind the 2022s qualitatively. More detailed coverage of individual villages is set to follow.  Explore Charles Curtis MW’s full report, notes and scores on the Decanter site (subscribers only)   Jancis Robinson – Matthew Hayes  For Matthew Hayes, 2023 offers a “near-repetition of the fine, balanced wines of 2022” – with wines that “will offer sustenance and satisfaction for lovers of (modern) classic, Burgundian Pinot Noir”. The fruit is “remarkably fresh and red-fruited”, with the wines fuller-bodied than the 2021s – although they are, he notes, not homogenous. The wines are those “vignerons wanted to make, rather than what nature made them make”, Hayes notes. He describes the whites as “generally lively, with a racy style matching ripe, mature fruit”. For him, the 2023 is a good vintage – one that sits alongside 2022 in terms of quality, with “deceptively open” wines that can be drunk while waiting for the 2019 and 2020s.  Explore Matthew Hayes’ report, as well as the entire team’s notes and scores on jancisrobinson.com (subscribers only)  Vinous – Neal Martin  “I adore the 2023 vintage,” declares Neal Martin. “I am hard pushed to think of another vintage so pleasurable from barrel,” he says. He emphasises how important it was to manage yields to avoid excess, with the year undoubtedly a “vignerons’ vintage” defined by actions in the vineyard. He finds the whites rounder in style, although not as richly fruity as those from 2018 or 2020. They are, he says, more traditionally styled, with good acidity levels that balance the richness of the year’s late summer heat. He notes that wines from limestone terroirs benefited from additional freshness, while Chassagne-Montrachet “continues to impress thanks to the cluster of talent that has emerged there in recent years”.  As for the reds, he considers them a combination of 2020 and 2017, feeling the wines are better than those of the latter year. It’s not a year to choose by appellation, but by producer – although he highlights Gevrey-Chambertin in particular as “a wellspring of great Pinot Noirs”, as well as the rising quality and value found in Marsannay. Some wines, he warns, lack concentration and can be a little lean, and it is less consistent than 2022. But, in general, “the reds convey a sense of transparency, more weightless than weighty,” he says, with wines that are fresh and crunchy, even if the acidity levels aren’t that high. While clearly set to be approachable early, he says, “they also have the balance and energy to reward the dwindling numbers who uphold the lost art of cellaring”. Among the best producers, 2023 offers “a veritable trove of white and reds that will drink earlier than their 2022 counterparts” – wines that are defined by their charm.  Explore Neal Martin’s full report, notes and scores on the Vinous site (subscribers only)  Wine Advocate – William Kelley Last out of the gate, William Kelley has finally proffered his judgement on the 2023 vintage – a year that is defined by its “abundance”. He finds the best to offer “demonstrative charm and immediacy”, but is clear that it “is not a vintage to buy blind”. Some reds show “dilution, elevated levels of volatile acidity and earthy, vegetal flavors”, and although the whites are more consistent, they can be “deficient in structure and cut”. The style of the wines varies significantly, he notes, and “whether growers picked before, during or after the September heat wave could deliver very different wines, ranging from light and vegetal to brooding and muscular”. He is clearly charmed by the best, however: “velvety, fleshy wines that are suave and sensual”, sweeter and often more structured than the 2017s, and not as ripe as the 2018s. As for the whites, he finds them generally “rich and flamboyant, with unctuous textures and sweet fruit” – and, “when they are united with good freshness and enlivening structuring dry extract, the results can be compelling”. He compares them to “a broader, more open-knit version of 2015”. We normally taste Ch. Berliquet at Canon during en primeur, and with a tightly packed schedule there’s never enough time to visit both properties. This year, however, an extended trip allowed us to visit once most of the trade had left the region. On the sunny Monday after the week of en primeur, we arrived at Canon as normal – but, instead of disappearing into a tasting room, hopped onto some of the property’s iconic bikes (which are genuinely used by staff to travel between the two estates), and pedalled across the vineyards to Berliquet – a property that the Chanel team has quietly been transforming.  Ch. Berliquet is one of the oldest estates in Saint-Emilion, with roots dating back to the 1760s. The first known owner was Jean de Sèze, a contemporary of Jacques Kanon (the founder of Ch. Canon). This single plot of vines on the slopes of Saint-Emilion’s limestone plateau has remained unchanged for over 150 years. Southwest of the town, nestled between Ch. Bélair-Monange and Ch. Angélus, it offers much more than meets the eye. The wines were vinified by a local co-operative as recently as the late 1970s and the property only achieved Grand Cru Classé status in 1986. When Chanel acquired the property in July 2017, you would be forgiven for thinking that fruit from Berliquet would go into its more illustrious neighbour, Ch. Canon (which Chanel has owned since 1996); but that wasn’t what they had in mind.   “At the beginning, we took our time with Berliquet. To start with, we had to focus on ourselves,” Axelle Araud, the estate’s Wine Development Director, told me at a recent vertical tasting. The team credits the estate’s progression in part to a better understanding of their surroundings. Not long after their acquisition, the team carried out an extensive soil study which revealed that the estate’s slopes are home to all three of Saint-Emilion’s hallmark soils in equal measure: the vineyard’s plateau is made of limestone, the hillside a mix of limestone and deep clays, while the banks of the Dordogne river are predominantly sand and clay. The unique diversity of the soil helped to underline the estate’s identity.  “Ch. Berliquet is the expression of a specific landscape,” Araud says. One key element of this landscape is a Mediterranean belt that runs across the property (found at Bélair-Monange too), with Mediterranean species of plants naturally growing here – with cypress, fig, pine trees, lavender and laurel all at home. The team has looked to nurture this natural biodiversity, planting over 1,000 hedges, shrubs and trees since 2017, as well as installing nesting boxes for birds (to help as natural pest control). The property is certified organic as of the 2024 vintage.  Alongside this, Nicolas Audebert has embarked upon significant restructuring of the vineyards. At the beginning of Chanel’s tenure, the vineyard was planted with as much as 80% Merlot; but, in early 2018, following their soil analysis, the technical team realised the significant role that Cabernet Franc could play on the property’s clay-rich soils, on the slopes below the limestone plateau. Since then, the vineyard has gradually been restructured, with plots of Merlot replaced with Cabernet Franc. Today, 2.5 hectares of the vineyard have been replanted, taking the proportion of Cabernet Franc up to 40%. The goal in the long term is to bring the blend up to 50% Cabernet Franc.  In 2021, they also decided to plant some Malbec – 0.34-hectare plot of this grape that was – prior to phylloxera – widely planted in the region. Nicolas Audebert and his team believe that addition of malbec will add to the diversity of the fruit, the results of this change will be evident from the 2024 vintage, with its first inclusion in the blend.  While much of the work has been in the vineyard, part of Berliquet’s recent progress can be linked to the winery. Although Berliquet benefits from having the same technical team as that of Canon and Croix Canon, one of the thinks that marks Berliquet out from its stablemates is their use of amphorae. The estate started with just two amphorae in 2019, and today have 12 – deemed a key part of the wine’s character, with 10% of the blend matured in these clay vessels instead of oak. Araud pointed out that the amphora have helped to preserve the brightness of the fruit – carrying through their work in the vineyard to the final wine.  The 2023 vintage also saw the inauguration of what Araud calls “the playground” – their new vat room, complete with 22 stainless steel tanks. “Now that we have all the building blocks in place in the vineyard, we can pay more attention to each and every plot, resulting in greater precision and refinement in the final blend,” she explains.  The 2024 vintage is the eighth under team Chanel and, over that time, the team has continuously questioned their practices, making small adjustments in the vineyard and winery – making gradual but constant progression. And that progression is evident in the wine today, which has shaken off any rusticity it might once have displayed. As Jean-Basile Roland, Commercial Director for Chanel’s three estates, described to us back in April, they’ve been sharpening the wine’s silhouette – a wine that he describes as “telluric” versus Canon’s “ethereal” style. “I want to struggle,” says Cristiana Tiberio, earnestly, as we talk in London. This Abruzzo winemaker has rapidly become one of Italy’s most fashionable names. Thanks to her hands-off approach in the winery, she’s a darling of the natural wine scene, but is also earning top scores and rave reviews from the likes of Eric Asimov (The New York Times), Antonio Galloni (Vinous) and Ian d’Agata. But, as I found talking to her, she’s far from complacent.  Cristiana fell in love with wine as a teenager. Her father, Riccardo, was friends with Bruno Giacosa and the legendary Piedmontese producer’s wines were her favourites. She noticed early on that wines made with the same grape from different sites tasted totally unlike each other. “Wine was an infinity world,” she tells me, still with a touch of whimsy – and it was a world that she set her heart on exploring. When the time came, she set off to study chemistry at university – looking to the science behind wine rather than more practical oenology. Before she knew it, however, she’d been diverted, ending up with a PhD in photochemistry, far from “the infinity world” she’d committed to. So she quit. Instead, she travelled the world, working with various top producers, including Jacques Selosse, Nicolas Joly, Egon Müller and leading names in Chablis, before returning to Abruzzo in 2004.  In the meantime, her father Riccardo had found a special parcel of land in the mountains near the town of Cugnoli, with an abandoned plot of Trebbiano Abruzzese – the indigenous grape that had largely disappeared from the region. With its large, juicy berries and thin skins, this variety is more susceptible to fungal disease, can be challenging to ripen and lose its bright acidity if not picked at the perfect moment. Trebbiano Toscano (ubiquitous across much of Italy, and in France under the guise of Ugni Blanc) had replaced many plantings – favoured for its small berries, ability to accrue sugar easily and retain its moderate acidity.  This abandoned vineyard had survived largely because of its unique site – with canyons to the south and west, meaning a wind blows through the vines constantly, clearing the humidity and reducing disease risk. It was also planted in the traditional Abruzzese pergola system, with two vines planted at each post, wider (four-by-three-metre) spacing, providing competition but also forcing the branches to grow longer, meaning a larger canopy, aiding photosynthesis and therefore ripening. Now 95 years old, these ungrafted vines had also endured thanks to their fortuitously sandy soils (a neighbouring plot, on marly clay, had to be replanted on rootstock, and is now around 80 years old).  While the Trebbiano Abruzzese was the lure of this site, much of the property Riccardo purchased was unplanted. Today, Tiberio has 30 hectares of vines, all in one contiguous parcel – with additional woodland, as well as alfafa and wheat fields, all part of the family’s championing of biodiversity. And, as much of the area hadn’t been planted, the property hadn’t suffered from industrial farming – meaning the soils were already healthy, however preserving it is at the forefront of what Tiberio does.  The vineyards are divided between Trebbiano Abruzzese, Pecorino and Montepulciano – a fraction of the various grapes permitted in Abruzzo, but – importantly for Cristiana – the ones that were historically native to their mountainous terrain. They only planted with massal selections – something Cristiana feels is key. She argues that clones sourced from vine nurseries are designed to be planted anywhere, sacrificing anything “native” in the name of disease resistance and/or yield. “For me, historical heritage is everything in the wines,” she explains. On a more practical front, she finds that massal selections cope better in difficult vintage conditions, adapting more easily. As evidence, she points to a plot of ungrafted vines that she planted in February of this year (2024), explaining how despite the extremely dry conditions, the vines survived – entirely unirrigated.  While Cristiana clearly values the traditional pergola training, she has chosen to use guyot training for most of their vines. The old vines – largely used for Fonte Canale and Archivio – are under pergola, however she doesn’t feel it’s right for everything. When it comes to Pecorino, she explains how the variety naturally grows vertically, meaning pergola-training would force the vine into an unnatural shape, impact sap flow, and therefore quality. As for Montepulciano, while they have 2.5 hectares (used for Archivio) under pergola, she feels that the pergola system can push the grape’s rustic character – the thin skins with less phenolic ripeness (due to shading) at risk of producing more easily extractable, less refined tannins. For her, guyot elevates the flavour profile of the grape and helps balance the potentially aggressive tannin, avoiding it being too “loud”.   Cristiana’s brother Antonio is in charge in the vineyards, where they work organically. They briefly trialled biodynamics, however have veered away from using the preparations, along with any fertiliser or seeded cover crops – keen to avoid adding any outside inputs that aren’t “respectful of their terroir”, as Cristiana puts it. The winemaking continues this philosophy, with indigenous yeast, almost no new oak across the range (just 30% for the Archivio bottling), the wines unfined and unfiltered, largely avoiding temperature control where possible, and SO2 only added at bottling.  Although organic, they aren’t certified – something she feels strongly about. She explains how both dedicated, small growers and “big, industrial” producers can bear the same certification, while one’s farming is considered and artisanal, yet the other is borderline conventional. It “certifies our attitude and we stay lazy”, she tells me. “We stop struggling with our mind to find what is better for our terroir,” she says – something that she is anxious to avoid, keen to continue striving, pushing and working to do better, rather than tick a box and move on.  And that work is not merely intellectual. Having just finished harvest in Abruzzo before touching down in London, she was soon flying off to Oregon – squeezing in a second northern-hemisphere vintage at a property there. It’s a chance to learn, and few 50-year-olds seem to be quite as restless as this one. While Tiberio is a family venture, it’s not one that was passed through the generations – something for which Cristiana is grateful; she has been able to choose her site, choose the wines she’s making and define her own philosophy – one that is now resonating loud and clear around the world.  The Tiberio range  The regional wines  Trebbiano d’Abruzzo: Tiberio’s entry-level Trebbiano Abruzzese comes from three hectares of 75-year-old pergola-trained vines, those that were grafted 14 years after their oldest (dedicated to Fonte Canale). Only made with free-run juice, it’s fermented and aged in stainless steel.  Pecorino Colline Pescaresi: The vine material for their Pecorino was selected from a few old vines on the site, but comes from a 3.8-hectare plot planted in 2001 and guyot-trained. Only made with free-run juice, it’s fermented and aged in stainless steel. These are some of the oldest Pecorino vines in the region and the wine is unlike the modest Pecorino you may have previously tasted – ageing impressively.  Cerasuolo d’Abruzzo: This rosato is very special. It comes from nine hectares of Montepulciano, planted in 2001 and Guyot-trained. Made with free-run juice (with no maceration whatsoever) and only seeing stainless steel, it’s a perfumed and bright style of rosé that can and should age.  Montepulciano d’Abruzzo: This is the largest production cuvée, coming from 15 hectares of Montepulciano – both older pergola-trained vines (62-year-old) and younger Guyot (planted in 2001). As with the other entry-level wines, it only sees stainless steel, spending 15 days on skins.  Single-vineyard bottlings  Fonte Canale: Arguably Tiberio’s most sought-after wine, Fonte Canale is pure Trebbiano Abruzzese from 736 ungrafted, 95-year-old vines, spread across around two hectares of sandy soils. (They currently aren’t replanting the individual vines when they die, as don’t want to plant grafted stock, but are cautious of fragile young ungrafted vines attracting phylloxera.) It was first made in 2012, with these ungrafted vines needing time to recover from their previous neglect. The combination of site and variety produces wines with modest alcohols (often 12-12.5%) and naturally low pH (the 2018 is a mere 2.7pH!), giving a backbone of taut acidity (as Tiberio says – “not raw, but flavourful acid”). The site’s indigenous yeast produces a cool ferment (reaching maximum 23̊C) and a wine that doesn’t need racking post ferment, with little reduction. The malolactic is naturally blocked by the low pH and the wine only sees stainless steel – “to allow this wine to express its meaning”, Cristiana says. This stunning, vibrant white is a pure expression of a special site – one that ages beautifully, with its old vines almost overpowering vintage. If any further praise were needed for this wine, it has featured on the list at Massimo Bottura’s Osteria Francescana since its first release.  Colle Vota: First bottled separately in 2014, this vineyard is always the last to be picked. Planted in 2000 with massal selections from their old Montepulciano and guyot-trained, Tiberio finds the berries have thicker skins but release less during maceration (around 20 days). She also finds the tannins in the stems different here so is using a small portion of whole-bunch fermentation in the blend. Again with only free-run juice, the wine doesn’t see any oak whatsoever. Coming in a Burgundy-shaped bottle, this is the lighter of Tiberio’s two Montepulciano bottlings, but still with a firm tannic backbone, but with more delicate perfume.  Archivio: Launched in 2017, Archivio comes from the property’s 60-year-old pergola-trained Montepulciano on clay-rich soils, where the wind helps thicken the skins. Tiberio finds that the fruit has thinner skins from the middle of the pergola system, so these bunches are harvested separately. With thinner skins, the ferment has more lees and more reduction, needing oxygenation, so this is the 30% that goes into new oak to give it the necessary air. The bolder and firmer of the two Montepulciano bottlings, it is bottled in a Bordeaux-style bottle to indicate its ageing capacity – a wine that Tiberio confesses can be “monolithic” in youth, but offers great potential.  And coming soon… Quarmarì: A new single-vineyard Pecorino from 2023, this wine takes its name from the family dog, who passed away a few years ago. The wine has – so far – only been tasted by Ian d’Agata, who wrote that it is “a wine so amazingly good and unique that it will shatter all you thought you knew about the grape and what it can deliver”. Given how good even the entry-level Pecorino is, we can’t wait to try this.  The vertical tasting Pecorino  2006 Pecorino Colline Pescaresi: It’s hard to believe this is close to two decades old – the wine vibrant, lively and juicy with lean lemon freshness to the palate. There’s a suppleness to the body, yet it’s taut and mineral, and more honeyed and herbal notes emerging with air.  2009 Pecorino Colline Pescaresi: The 2009 Pecorino is instantly open, giving sage, thyme and honey on the nose, alongside fresh white peach. On the palate, however, it shows its restraint – still fulsome but with a mineral backbone that makes it feel youthful.  2013 Pecorino Colline Pescaresi: Leesy and mineral, this is almost reminiscent of mature Chablis or Blanc de Blancs Champagne – with a honeyed, chamomile edge. The palate is waxy and long, with a herbal lift to the finish.  2015 Pecorino Colline Pescaresi: There remains a creaminess to the nose here – the wine tighter than the 2013, with a limey, lean purity and plenty of energy.  2019 Pecorino Colline Pescaresi: This is strikingly different after the 2015 – much riper and more exotic, with apricot, peach, mango and orange peel. Combined with the wine’s viscosity, there’s something Viognier-like, however there’s still brilliant, mineral energy here, with tight, citrus-edged acidity.  Cerasuolo d’Abruzzo  2022 Cerasuolo d’Abruzzo: It will be amazing to see this wine develop. The nose is restrained – you can feel the potential behind. Gradually wild strawberry and bright raspberry emerge, alongside delicate rose petal florals. It’s tightly wound with immense energy to the flinty palate, a minerality driving through its core into the long, mouthwatering blood-orange finish.  2020 Cerasuolo d’Abruzzo: Deeper-coloured than the 2018, the 2020 has a brighter nose – with raspberry sherbet, strawberry laces and a creamy richness. The acidity again is in the driving seat, the palate chalky and mineral with lemon freshness and a slight phenolic grip that frames the crunchy red fruit.  2018 Cerasuolo d’Abruzzo: A surprisingly deep pink (especially given this is made only with free-run juice), with a copper hue. This was a real highlight of the tasting. The nose combines a flinty minerality with a funky, savoury, almost cheesy note, alongside dried cherry and rose florals. The palate has a line of bright acidity and a mouthwatering lemon finish. Very serious rosé that deserves bottle age.  Fonte Canale  2021 Fonte Canale: From a very dry growing season, this is such a baby. The nose is mineral with notes of pear skin, white florals, lime pith and cordial, with riper apricot emerging. It’s vibrant and full of tight, lemony acid, driving on to the chalky finish. Precise and pointed, there’s crisp apple and herbal freshness, with a saline edge.  2020 Fonte Canale: At first with a touch of gunflint reduction, the smokiness gradually lifts to reveal a tight and lean expression of Trebbiano d’Abruzzese – all citrus and mineral, needing time and air to reveal itself fully.  2019 Fonte Canale: The nose here combines vibrant green apple, greengage and lemon with a sea-spray freshness. It’s still limey and tight on the palate, but with a soft, full weight too – with generous yet tangy, white-pear fruit on the mid-palate, before tightening up on the saline, mineral finish.  2018 Fonte Canale: Dried herbs mingle on the nose with more hedonistic fruit – peach and green mango,, with real weight to the fruit here. There’s still the bite of piercing lemon acidity, surrounded by fleshier peach fruit.  2017 Fonte Canale: This feels much more closed in comparison to the 2018, with pure citrus energy, tangy, pure and limey, but with a slight creaminess mingling with the tart fruit. It’s concentrated and full of promise, but not giving much away now.  2016 Fonte Canale: Waxy and bright, the 2016 is full of energy. Pure flint, Meyer lemon and grapefruit pith, with more delicate white florals all vie for attention, while the palate is all about pure crunchy apple, minerals and its vibrant acidity.   2015 Fonte Canale: The nose here is complex – with notes of honey, chamomile, tarragon, bruised apple and a praline richness. The palate, meanwhile, feels brilliantly youthful, with lime sherbet and chalky minerality driving long into the mouthwatering finish.  2014 Fonte Canale: This was closed at first, with subtle floral tones of apple blossom and honeysuckle dancing on a background of lemon and pear flesh. The palate has that familiar drive of acidity leading into the impressively long, saline finish.  2013 Fonte Canale: Fresh cashew mingles with lemon sherbet on the subtle nose of the 2013, a wine with lift and energy. The palate is lively and long, with the finish offering honey, herbal notes and sweet hay.  2012 Fonte Canale: The first ever vintage of Fonte Canale, it was a real treat to try this special wine. The nose combines rosemary and thyme with candied lemon peel, as well as more honeyed notes. The palate is lithe and vibrant still, with a stony purity and saline finish.   Colle Vota  2020 Colle Vota: This combines juicy dark fruit, sweet spice, baked plum and violet florals. Rich black and red cherry fills the palate, with an edge of dried herbs and the scent of nutmeg. The tannins are savoury and firm, with a chalky freshness and zesty edge to the acidity.  2019 Colle Vota: The 2019 offers floral lift, with brighter cherry and raspberry fruit. Less savoury than the 2020, the palate is tight and mineral, yet with a softness to the mouth-filling fruit, all cut by juicy acidity.  2018 Colle Vota: This is drastically different to the 2019, offering an aromatic profile of baked strawberry and tea leaf – almost lapsang souchong. The chalky minerality stands out here, with high, piercing acidity giving the wine backbone.  2014 Colle Vota: There’s a significant colour change moving from the 2018 to the 2014 Colle Vota, while the nose reinforces this shift with leather and damp undergrowth sitting alongside dried red fruit. The tannins have softened and are supple, while the acidity still refreshes and cuts through the fruit.  Archivio  2020 Archivio: Savoury and rich, this is a powerful, dark, compact Montepulciano d’Abruzzo that needs time. It is intense and structured, full of tight bramble fruit and drying tannins, but with an impressive line of acidity at its core.  2019 Archivio: This is much more open than the 2020, with a sweeter, more red-fruited profile, and more overt sweet spice. Dried herbs and incense complement the bramble fruit. There’s a firm chalky grip to the tannins, tightening up as the structure announces itself on the palate, yet with mouthwatering acid keeping things balanced.  2018 Archivio: The sweet, baked red fruit of the vintage seems to carry through both of the reds in 2018. There’s a softness to the fruit, yet still power behind. It’s full-bodied and firm, yet the most approachable of the trio of 2018, 2019 and 2020, with fresh, juicy acidity.  2017 Archivio: There’s a touch of maturity just starting to show here, with the first hint of sousbois and leathery richness, an almost tarry character, sitting alongside the sweet plum, baked blackberry and smoke.
