One name that kept cropping up when speaking to winemakers about wine and cheese pairing was Bernard Antony, a man who now supplies 20 of the world’s 3* Michelin chefs as well as working alongside many of the world’s top winemakers matching cheese and wine at events for Guigal, Angelus, Humbrecht and many more.   We caught up with Jean Francois Antony (Bernard's son and protege) to find out more about Affinage (the ageing of cheese) and their perfect cheese and wine pairings. 45 years at the service of taste Bernard Antony is one of the world’s great cheese makers. Strictly speaking, his mastery
is in affinage, that is finishing and ageing cheeses. From humble beginnings working as a travelling grocer in Alsace, in 45 years he has gone on to become one of the most recognised men in the world of fine cheese.  Bernard Antony was the protegé of the late great Maitre Pierre Androucet – known as “the Pope of Cheese”. Bernard says of Pierre: "To me, he was like a father. He was the man who created me, who taught us everything, to my wife and me. He didn't like me to say it because he wanted to give me all the credit for my success”.  Following on from Androucet’s advice and support, Bernard set up his own cheese ageing cellars in the early eighties in the southern Alsace village of Vieux-Ferrette. The ageing cellars are made up of seven different chambers all at different humidity and temperature levels – ideal for raising and ageing various different styles of cheese. Only when the cheeses are deemed ready and at perfect ripening are they released to the markets and delivered to restaurants. Ageing of cheeses can range from just a few months for the fresher goat’s cheeses to several years for some hard cheeses. Speaking with Jean Francois Antony, Bernard’s son, who works alongside his father, running the day-to-day operations of the cellars, he identifies that the skills in good affinage revolve around a number of key elements. First of all, “raw (unpasteurized milk) is essential if one is to speak of cheese with authenticity…taking into account the breed of animal, the animal's diet, the talent of the cheesemaker and then of course the controlled process of ripening are also key”. The cheeses arrive at the cellars already halfway through ripening and their ageing cellars go into action to give them the final touch. They provide the perfect environment and temperature for ageing as well as the most important element in the Bernard Antony cheese cellars, the natural yeasts that live there helping the cheese mature distinctly and in the best way possible. website. They often pair the cheeses with fine wine so we thought who better to ask for advice on the ultimate cheese and wine pairings than the man himself.  Below is the Bernard and Jean Francois Antony’s essential guide to food and wine matching, split up between the different styles of cheese, with additional advice passed down from Pierre Androucet.  The Floury crust family of cheeses Camembert        Brie de Meux (un peu sale)         St Marcellin and St Marcellin (runny)     Petit Mosellan         Coulommiers         Chaource
 The classic pairing would be Champagne (Blanc de Blancs, Aged and even Rose Champagne) however Bernard Antony advises that you remove the crust as it can make the wine appear more harsh. The bubbles work brilliantly in refreshing the palate from these rich cheeses and the yeast flavours from the Champagne also work really well. Avoid tannic reds with these cheeses. One of Bernard's favourite matches include a Gevrey Chambertin 2012 from Domaine Denis Mortet with the St Marcellin. He states a white wine with both gentle oxidation and good acidity works particularly well with Petit Mosella (Saint Peray from
Domaine Tunnel or Alain Voge) or a fruity red wine with well-coated tannins such as a Beaujolais Cru wines with the Chaource and Colombier fermier. The Washed Crust family of cheeses Epoisses       Langres         Livarot     Munster  Maroilles    Vacherin         Pont-l’Eveque According to Androuet: robust and virile wines, with sap and generous bouquet work best with these potent washed crust cheeses. They require “solar wines“ which can harness the power of washed crusts. Gewurtztraminer Grand Cru from Albert Mann, Chambolle Musigny from Liger Belair would both work well. Pinot Noir from Zind Humbrecht, Bollinger 2008 Grande Annee also a particular favourites with Bernard Antony. The pressed crust family of cheeses Comte     Emmenthal        Beaufort         Gruyere Suisse According to Androuet the matches depend on the evolution of the cheese. Dry white or red wines with bouquet work well, red wine brings a balancing touch of bitterness. These cheeses flatter any red wine by erasing astringency and promoting fruit therefore making White or Red Burgundy a good match. With more ageing of the cheese, wines from the greater South-West, the Rhône Valley and Languedoc Roussillon become better matches. Other personal
favourites from Bernard Antony include Vernaccia di San Gimignano (Italy) White
wines from Valais (Switzerland), and Savignin wines from the Jura. The pressed (uncooked) crust family of cheeses Morbier   Tomme de Savoie fermiere       Mimolette demi étuvé         Salers     Roblochon  Sainte Nectaire Pairing again depends on the maturity of the cheese. The older the cheese the richer the wine. Chateau Latour 2001 is Bernard’s match with Morbier. Saint Joseph Pierre Gonon 2013 works well with Reblochon and Chateau Canon La Gaffeliere Grand Cru Classe St Emilion 2008 works well with Saint Nectaire. The family of blue cheeses Bleu d’Auvergne     Roquefort        Fourme d’Ambert      Blue de Gex          Stilton    Gorgonzola These are best paired with sweeter fruited wine or sweet wines. Avoid red wines as the mould changes the structure, the aromas and brings out the bitterness. Top picks are Rivesaltes Vins Doux Naturels, Pacharenc du Vic Bilh or aged Sauternes even red Vins Doux Naturels such as Maury, Banyuls work well with blue cheeses. The family of Goat and sheep cheeses Ossau-iraty         Brebis cremeux et parfume Brebis Corse     Chevre Frais    Chevre Moelleux et onctueux   Chevre Affiné. Vieux et sec   St Maure de Touraine Banon de Provence Chevrotin des Aravis With this family of cheeses the wine must tame the acidity of milk. The wine must work with the texture of the fat and complexity of the flavours. Androuet confirms the well-known phrase – match local wines with cheese of the same origin, particularly very dry and fruity whites. Dry white wines from the Loire – include the smoky Pouilly Fume, Sancerre, Menetou-Salon, Quincy and Reuilly work well with the goats cheeses from the region. From Burgundy, try the lighter Aligoté, Saint-Véran, Macon villages and from the Alpine pastures the white wines of Savoie or lighter reds of the Loire – Bourgueil and Chinon. Bernard Antony’s particular favourites with these cheeses include wines closer to home including Riesling Vendange Tardive 2007 from Barmes Buecher, 2002 Brundlmayer Gruner Veltliner Kaferberg 2002 and Pinot Gris Grand Cru Osterberg 2016, Domaine Agape. Soldera is one of Italy’s most iconic and best-loved wines. In top vintages, it is the absolute benchmark for Sangiovese par excellence and there are few wines in the world that can achieve the same level of ethereal beauty. The estate has always been a family affair and, following the passing of founder and guiding light Gianfranco Soldera in February last year, the remaining family members have continued his work, adhering to his strict philosophy and methods in the vineyard and winery. We caught up with Gianfranco’s daughter Monica Soldera who, alongside her husband Paolo, has worked with her father at the estate since 2003. The Soldera philosophy The Soldera story starts with the winery, Case Basse. “Its foundation is built on the history and heritage of the family", Monica says, "[it is] focused on a love of nature, passion for food and wine, and pleasure of knowledge. Nowadays Case Basse follows this path thanks to the help and personality of my mum, my brother Mauro and his wife Valeria, me and my husband Paolo.” Elegance, perfume and balance have been at the heart of Soldera from the outset. This has been achieved through a combination of factors synonymous with fine wine production: extremely low yields, strict grape selection at harvest, and the all-important terroir which is so well suited to growing Sangiovese (including not only the soil but all the natural influences specific to the estate such as climate, exposure and elevation). In addition to this, Soldera has always operated under a philosophy that the family refers to as “fine-tuning”. This fine-tuning approach has seen the estate go into minute detail in both the vineyard and winery to improve the quality of the wines. For example, the de-stemming of the grapes is done in a special machine that safeguards the integrity of the berries and enables their selection according to size. Berries are then checked manually, one by one, before being transferred directly into 100-quintal (10,000kg) oak fermenters for natural fermentation. Movement and racking of the wine is not practiced unless absolutely necessary and the wines are aged in large old Slovenian oak casks for around four years before the wines are bottled directly from the cask, completely unfiltered. Extensive research is also carried out at the property, as Monica explains. "There are two souls at Soldera: the first is very traditional in its work in the vineyard and in its winemaking processes but the other soul is academic".  Soldera has become a beacon of research in the region, commissioning in-depth studies on the soils, clones and climate within the property.  Monica says that climate change over the past 10 years has been very noticeable and therefore it has never been more important to understand nature, adding: “Nature gives you a lot of signals but you need to understand what those signals are telling you.”  Without research and a deeper understanding of their environment, many farmers might use aggressive methods to combat problems in the vineyard which cause more damage. “If you are scared, you act aggressively. If you are attentive to nature, it gives you confidence and you can work to protect it”. The research continues today with grants awarded to researchers who use the Case Basse vineyard to carry out their studies. This year they celebrated the 10th anniversary of The International Soldera Case Basse Award for Young Researchers, which is awarded by a commission of six agricultural professors and experts.  Candelaria Castello Lloret received the top prize in 2019 for her research entitled Metabolomics Characterisation of Spontaneous Vine Growth in Case Basse Estate, Montalcino. This type of research has enabled Soldera to continually refine their agricultural work as well as provide data for agricultural practices more generally. The 2019 harvest The 2019 harvest was the first at the estate without founder Gianfranco and therefore a very poignant one for the family.“It was full of emotion and responsibility," Monica says. "However, we are really happy with the results and the first evaluation of the wine leads us to believe that Soldera 2019 will be one of the best-ever produced at Case Basse."  "We took care of the vineyards, we selected the grapes and we carried out the vinification according to the principles and the practices that we learned from my dad throughout the years," Monica explains. "Even though nature can be variable and we must adapt to it. The 2019 growing season has been characterised by a different meteorological trend compared to other recent years. A cold winter with few precipitations followed by a fresh and rainy spring and a hot dry summer led to high-quality grapes very rich in fully ripe tannins, a guarantee for a long-lasting wine". "Meanwhile, 2016, 2017 and 2018 are maturing properly in the cellar and we are monitoring and tasting them regularly with the support of Professor Vincenzini and his team," she adds. "All of them offer us joy and great emotions that we will share with our customers in the coming years.“ The 2015 vintage  On the 2015 vintage, which is due to be released in the next few weeks, Monica said: "It has been a regular year in climate with no particular difficulties in vineyard and vinification. My father said 'an easy vintage' which means no challenges in production but joyful in wine. Nature was generous in 2015 and after having 2014 so difficult in weather this has been a gift.  "The 2014 Sangiovese Soldera is thrilling, but the production has been very limited so we are only able to share it in lower quantities with our customers. Coming back to 2015, we think that drinking wine is a personal and specific experience, nobody is allowed to tell you what you feel in your nose and mouth. At the end, what is worth is if you finish the bottle (not alone!) because you enjoy it. So I do not want to write about perceptions in tasting as a rule. Personally, I would say: a rainbow of emotions." The 2015 was exceptional in Brunello di Montalcino more generally. Significantly warmer and drier than the two previous vintages of 2013 and 2014. Production levels were around average for the estate at just over 16,500 bottles, up from just under 10,000 in the more difficult 2014 vintage. Everyone remembers their first bottle of Soldera, such is its impact on the senses. Speak to anyone lucky enough to have tasted it and watch their eyes glaze over as they are immediately transported back to the moment, the friends they shared it with and no doubt the food it accompanied. It is one of those rare wines that has a way of imprinting itself on the memory. Such is the magic at work in seemingly every bottle of this special Tuscan red that it’s not just the first bottle, but every bottle that you remember. This year marks the 50th anniversary of the founding of this enigmatic estate set in the hills of Montalcino. In its comparatively short existence, the wine has built a considerable reputation, yet after founder Gianfranco Soldera passed away in 2019, the property finds itself at an interesting crossroads. Right up until his death, Gianfranco Soldera had very much been the face of the estate. His personality and strong opinions made him a memorable character – and a man not beyond controversy. He was a leading voice against the Brunello consortium’s handling of the Brunello-gate scandal in 2008 and fiercely believed that Brunello should be 100% Sangiovese. In 2012, his winery was the victim of sabotage, in which large volumes of wine (from vintages between 2007 and 2012) were lost – simply poured down the drain. After the attack, the Brunello consortium offered to help club together and replace the wine, but Soldera rejected the offer and soon left the consortium (although the exact reasons behind his resignation or expulsion are unclear). After this incident, Soldera simply labelled his wine as Toscana IGT (today IGP), to make a point that his wine was and will always be 100% Sangiovese. Despite his polarising nature, ultimately Soldera let his wines do the talking. He was incredibly ambitious from the start, setting out to produce a wine that would compete with the world’s finest – a feat he achieved remarkably quickly, considering he started the vineyard from scratch – replanting the vineyards in their entirety when he arrived at the estate in 1972.  While Gianfranco was the face of Soldera, he did not work alone. The estate has always been a family affair. Both Gianfranco’s son Mauro and daughter Monica, along with her husband Paolo Franco, have worked at the estate for many years. It is Monica’s husband who has since taken charge of the winemaking at Soldera, after working alongside Gianfranco for 16 years.  As we sit down to taste through seven vintages of Soldera that span 21 years, Monica introduces her husband, on what is his first visit to the UK as Soldera’s winemaker. She makes the point that before joining the family business, Franco was in fact a skilled silversmith – requiring a keen sensibility of the hands, eyes and mind. Skills, she believes, are ideal for working at Soldera, and perfectly attuned to her father’s perfectionist mentality. Gianfranco was by all accounts not an easy man to work with. “It’s a difficult job,” Monica laughs. “We are not him, but we try our best.”  Monica also explains that, despite her father’s headstrong approach, he was always open to advice and frequently invited university students to the estate, experimenting with vines on the property, exploring ways to bring out the best in the grapes and vines. Monica believes that science is the key to making wine more naturally. “The more we study, the more natural our processes become,” she says. Working with students has allowed them to fine-tune what they do, keeping the vines healthy in the shifting climate. The 2017 vintage – the penultimate wine made under Gianfranco’s watch – is due to be released later this year. It was a very difficult vintage in Tuscany, with a ferocious heatwave in the summer of 2017. There were concerns that it might be similar to 2003, when their vines were badly affected by the high temperatures. But to their surprise, the vines showed no signs of water stress, the leaves remained green and rich in colour. Soldera felt this was down to the vines’ deep roots and higher trellising, something they introduced after 2003.  Despite the lack of water in 2017, the team was still able to work with a bigger canopy – meaning more leaves to shade the grapes. The intensity of the summer saw them harvest the grapes a whole month earlier than is typical, starting on 26th August. “To lose one month is extraordinary,” says Monica. Production was also down to 11,000 bottles, versus a normal 15,000. Technically they are allowed to produce as many as 50,000, giving an idea of how much they are prepared to sacrifice to maintain their high standards. Tasting the 2017, there is only a hint of the heat that severely marked the vintage for many of Soldera’s neighbours. The wine still has the trademark perfumed aromatics of old rose and the sinewy tannins that flex beautifully on the palate. It is easily one of the most elegant wines produced in Montalcino in 2017. The 2017, however, was always going to struggle to live up to its predecessor, the 2016– a vintage that is amongst the very best in the region. Monica noted just how easy 2016 was in terms of the growing season; everything was just right, right up until harvest. The sheer amplitude of aromas is really quite extraordinary, with strawberry fruit, old rose perfume, fiery earthy, irony, ferric tones and a wild floral note. The energy on the palate is wonderful and thick, tender, with almost elastic-like tannins that make the mouth water. The wine has such vibrancy and a really long finish. The 2015 as a vintage sits somewhere between 2016 and 2017 in style. While it was very warm, the vines were less affected and produced wines of great concentration. The wine does not have the aromatic amplitude of the 2016 and is nuttier in its aromas rather than perfumed, but seemingly the signature of Soldera – those tender tannins, like silk, bring so much energy and emotion to the wine. The 2014 is perhaps a surprise highlight of the flight. It was a difficult vintage, with lots of rain. For Monica, it proved very tough and required lots of sorting and fruit selection. In the end they got just 400kg of fruit from one hectare, making just 8,400 bottles. The dried rose, perfumed scent is matched by earthier, ferric tones. I get tomato leaf – which is often considered negative in tasting notes – but here it adds a wild, lifted, herbal tone that brings more complexity to the wine, complementing the sweeter rose notes and savoury, dried-stone aromas. The breadth on the palate is where the magic really is. It stretches right across the palate and brings such effortless depth too. The tannins are still tight but just starting to ease up, and there is so much freshness too. It really is in a wonderful place. A 10-year gap and the 2004 is the wine of the flight. Despite the bottle age, the scented Pinot Noir-esque perfume is still there in abundance, matched again by an earthy ferric richness. The tannins have eased up as you would expect, developing more mid-palate richness, making the wine incredibly juicy. The tannins are still elastic and bring a huge lift to the palate. It is a mesmerising wine. It was a great vintage in Tuscany, albeit with moderate temperatures for Montalcino, and it has matured beautifully. Some argue that Soldera excels in more moderate vintages – something that shines through in the 2004 and 2014.  The 1999 is another great vintage in Brunello and the next wine in the line-up. Distinct tertiary notes are now showing on the wine, with blue cheese, roasted walnut, dried cherry, sage and light herbal tones mingling together. There is still so much vibrancy to the wine. The tannins are not quite as silky as the younger vintages, but the acid is still so striking. It definitely feels like a wine of its age and, despite the minimal approach at Soldera, the framework suggests extraction levels were higher back then, in keeping with the trends of the time. It is a lovely wine, but not as ethereal as others. Finally, the 1996: at 26 years of age still holds on to those wonderful, scented aromatics as exuberant as ever. Again, matched with more tertiary notes, blue cheese along with dried cherry fruit, lots of dry extract, the tannins as structured and sinewy as ever, but still very fresh. It’s an unforgettable flight of some of Montalcino’s top vintages, but it’s Soldera’s ethereality that emerges – with that heady mesmerising scent and tender tannins consistent across the wines. Soldera might thrive in cooler vintages, but the quality of this wine rarely drops below outstanding. Even without Gianfranco at the helm, it’s clear that – under the watchful eye of Monica Soldera, Paolo Franco, and the rest of the Soldera family, not to mention their research team – the estate has a very exciting future ahead. Wine, though the most intimate of pleasures, lends itself to the most expansive of texts. We drink wine most often – tastings aside – in pairings of two, or in lonesome but agreeable solitude, and, its narcotic pleasure being felt internally, we feel its effects as we feel a fever: almost secretly, in shivers. Though wine is like sex in its intimacy, unlike sex, the form in which we fetishise wine – our vine erotica – is not hushed and illicit but encyclopedic. On the shelves of any wine drinker, there are likely to be catalogues, dictionaries organised by region, old Parker buying guides some 600 pages long that somehow, though dated, can’t be discarded.  Wine seems singular among human pleasures in this. We don’t, as a rule, rush from reading a poem to great anthologies of poetry, or add to the savour of seeing a play by reading a big atlas of dramatic literature – not, at least, after we graduate from school. Sports fans, it’s true, like big books of statistics, but then sports-watching is a social act in the first instance – the more people in the stands, the merrier the occasion. With wine, we like the macro with our micro: with a solitary glass in hand, we look, in print, over the next hill, or the current vintage, at the vineyard across the way, or the vintage yet to come. It’s part of the pleasure the glass provides. The reasons for this micro and macro turn are, on reflection, commercial and artisanal as much as aesthetic. The business of wine needs a big picture of its domain, its resources, and its potential market – scale sets the stage for commerce. The makers of wine like to place themselves on a broader map of where wine is and what it’s made with. The great Bordeaux classification of 1855 is not just the noblest public monument to a beverage ever attempted, but a model of market-making and even market price-fixing. Once a hierarchy of growths has been established, it is easy to slot in the price tags. But there is a truth of taste beneath the ordering of value. With wine, we know that what we are experiencing is, however singular, still an intersection of opposed forces – as the peerless wine writer Jancis Robinson MW says of her first glass of Chambolle-Musigny 1959; “I knew at once that there was something in the glass that was sensually delicious but that it was also made, produced, and therefore suggested a history of intellect and discernment.” The pleasure of wine is the crossing of a place, a grape and a people; and so, we turn to the big books to frame the small pleasures.  What distinguishes wine from even a good glass of ale or a local brew is the specificity of the pleasure set against the scale of the system that made it – one that historically embraces the planet. It’s a First Growth, or a domaine Burgundy, or a Ridge Zinfandel or a New Zealand Pinot Noir made to a Burgundy model by American wine makers … the more we know, the more we’re free to feel. Most sensory pleasures are specific to the point of being illicit – aside from the bemused fetishist, romance is a spontaneous pleasure, often aided, to be sure, by a systematic wine. Wine is premeditated; we choose a bottle, let it ripen, and break it open. Even casual table drinking has a tale to tell, a journey to trace on a map. These thoughts are brought to mind in contemplation of Wine Grapes, the monosyllabically titled but unprecedentedly expansive dictionary of grape varieties grown to be crushed and fermented on this green planet. Authored by Robinson, along with Julia Harding MW and the geneticist Dr José Vouillamoz, it marks an epoch – several epochs – in our understanding of wine, from both a professional planet-straddling and an amateur glass-in-hand perspective. A book of its time (published in 2012), it was made possible, in part, by a revolution in the DNA analysis of wine grapes to help discover their origins and histories.  The DNA profiling of wine grapes only began in 1993, and the first ‘paternity test’ successfully concluded in 1997 – a mere few days ago by historical perspective – with specialists, Dr Vouillamoz among them, drawing astonishing Darwinian lines among seemingly unrelated grapes. Zinfandel, it has been discovered in the last 40 years, is not only the Siamese twin of Primitivo, but its Croatian Siamese twin. In proper Darwinian fashion, the book tells us, “It looks increasingly as though an enormous proportion of the grapes we know today are members of a few key families.”  The leading families of wine, Pinot and Nebbiolo and the rest, like the leading houses of Westeros, jostle and engage in incestuous inter-breeding as they move towards dominance. As Jancis Robinson admits, the quest for the origins of grapes can become surprisingly emotional. “The Zin quest is so … heated. There was a Zinfandel conference in Croatia, with all the great Zin makers, even Joel ‘King of Zin’ Peterson from Ravenswood, and we all had to present our various things about Zinfandel. There was a small cohort of people from Montenegro who reckoned that their variety – whose name is unpronounceable – was the true progenitor of modern Zinfandel, not the Croatian one. It became so … Balkan! And you know what? They may be right!” Wine Grapes is of its time in another sense as well, marking the moment when we have started to think of wine not solely in terms of region, but much more in terms of variety, with the semi-mystical term ‘terroir’ acting as a kind of Holy Spirit between them. Thinking ‘grape’ more than ‘place’ releases our imaginations. The wholesome instructive pleasures of the book, to which we’ll come, shrink beside the unwholesome, guilty pleasures of turning the pages to meet the failures among grapes – the near-misses, the long-forgotten and forlorn lost toys – which please more than the patterns of primacy. The pleasure of reading about the grapes whose juice we do drink is nothing compared to reading about those we don’t. In dictionaries, oddities and parentheses fascinate us more than the major entries. No one turns to the dictionary to study ‘and’; we go to study ‘antediluvian’. So, turning these pages, flipping through the P’s on our way to encounter the great Pinot families, we come upon the lesser gods, even the little misshapen gnomes and dwarves of the wine world, and we delight in meeting them. (A fascination added to by the forthright sub-heads the editors provide.) On our way to Burgundy and Pinot Noir, we also meet Pinotin, a ‘recent obscure Swiss hybrid’ which edges into Pionnier, ‘a minor but complex, cold-hardy American hybrid used in blends in Québec’, and, of course, Pinotage ‘South Africa’s very own cross, both loved and despised’, which leads us on to Pugnitello and even Pukhliakovsky (a Russian variety ‘with erratic yields producing light wines’) and even unto Pules – ‘a minor Albanian white’. Radiating out from five pages on the major Merlot, we bump into Merseguera, ‘an uninspiring variety’ from Spain, and Merzifon Karasi, and Merzling, dismissed as a ‘very minor disease-resistant German hybrid’. Why these lost or obscure kinds of grapes bring so much delight with them is a fascinating question. It has in part to do with our general appetite for oddities and obscurities, which once produced ‘freak shows’ and still makes us fascinated with archaic musical instruments: we are curious to hear the sackbut because we want to know what led to the trombone. It is also the virtuous case that variety is the safeguard of continuity. In an age of ever-decreasing biodiversity with just a few varieties taking the place of many possibilities, one Quixotic California winemaker, driving through the fields of Cabernet and Chardonnay, dismissed them all – with a wave of the hand – as “chocolate and vanilla, chocolate and vanilla”.  The health of the planet is safeguarded by the persistence of so many kinds. It is also because the existence of these minor yet still thriving varieties gives us a satisfying picture of adaptation, the central biological act. Each of these grapes has found a home in the world. It may not be much of a home, but then neither, face the facts, is ours. We identify with the unknown grape. We are all more like a very minor disease-resistant German, or a cold-hardy Québec hybrid, than we are something noble and complicated. Few of us are bottles of Burgundy; we can all identify as minor Albanian whites. In conversation, Jancis Robinson, sheltering at home near Kings Cross in London, a home with a view of a graveyard (though a cheerful one she assures an interviewer) – talks of the wine almanac with the blunt enthusiasm that marks her writing. Robinson, in addition to her obvious honours and credentials, is a rare thing in the wine world, or any world: a writer who writes with equal parts brio and expertise. She explains the origins of Wine Grapes. “What happened was that one of the co-authors, Dr José Vouillamoz, who had been at University of California, Davis, felt that he needed to earn more of a living, and came back to Switzerland and got a job working on Alpine botanicals. But he didn’t want to lose his relationship with wine, and he came to me and said that he’d like to collaborate on a book about grape varieties. I’d already written one in 1986, based on our very fractional knowledge then.  Over lunch, I took along Julia Harding, a wine writer who works on my website. She’s extremely punctilious.” (Robinson, punctilious herself, says this with such emphasis that the listener feels that, with Harding, we must be talking about new frontiers, not to say dimensions, in punctiliousness.) “She had exactly the right sort of brain for a project like this. José suggested that we focus on the 10 or 12 most planted grape varieties to help simplify it. I thought that that book didn’t sound interesting enough. I waited until we were quite far down a bottle of Valpolicella and said, ‘I think our book should be about every single grape variety we can find.’ He gulped and said, ‘Then that’s what we shall do!’” The idea of creating a ‘perfect map’ of a subject is one of the itches that govern modern life. John James Audubon set out to describe not the major but every bird and beast in North America, and that’s what he did. Similar ‘almanacs of everything’ fill our botanical and anthropological shelves. It is an ambition so tied to modernity that in the mid-19th century, Lewis Carroll perfectly satirised it in his novel, Sylvie & Bruno, where two mad professors talk about their dream of making a map that would be on a one-to-one relation to the actual world – utterly perfect, if impossible to unroll. “I loved the scale of the thing,” Robinson says of her perfect map. “So, we carved things up: José did all the DNA stuff and history because he had good access to it, Julia, bless her, did the footwork – how much of each grape is planted where – while trying to taste as many as possible, too! And I wrote the entries on the best-known varieties, and the introduction and read every single word.  As with any dictionary, we used what came before: we went through appellation lists, with all of the varieties allowed, some of them almost extinct. A nice little detail of the book is that we persuaded the publisher that it should have some colour plates, and we were particularly keen to include the plates from the world’s first oenological book, L’Ampélographie: Traité Général de Viticulture, of 1901 … just out of copyright!” She pauses. “Of course,” she adds reflectively, “it was José, naturally, who discovered that Pinot and Syrah are related.” The offhand nature of her mention can’t conceal the significance of the remark. Of all the discoveries offered in the book, this is perhaps, for the amateur wine drinker, the most exemplary and astonishing. Painstakingly tracing the DNA heritage of the varieties, these two noble houses, Syrah and Pinot – the grapes of the Rhône Valley and those of Burgundy, the heart of Côte-Rôtie and the soul of Chambertin – are unified as cousins. This happened not through willed cultivation but in the natural evolutionary way: through variation and adaptation. Initially, the elegance of Pinot Noir was transformed through the usual evolutionary pressures of place and mutations, into the earthy pleasures of Syrah.  Chance mutation and lucky planting turned one grape into its near opposite. (‘Cross-fertilisation’, we’re told, ‘was common until the early 20th century because several grape varieties were often intermixed in the vineyards, facilitating natural crossings between distinct grape varieties’.) The phylloxera epidemic in France from the 1860s on – though it did not destroy as much as is sometimes thought – acted as a kind of sieve or filter of grape varieties, a sort of extinction event in large-scale natural history, forcing hard choices and making obscure varieties less desirable to save by root grafting with New World vines.   One virtue of the book is to propose, in effect, a new order of wines by celebrating ‘secondary’ grape varieties. “For me, among the obscure wines, something about as well-known as Cinsault stands out – it can make such lovely wines,” Robinson says. “There’s been such a sea change as the century turned. Everybody once wanted to make fruit bombs to one of three standard recipes. Then in this century, higher acidity, lighter wines are finally revaluing, and so Cinsault comes into its own. “Sometimes I come across a grape that isn’t well known but that’s so obviously superior. There’s Aglianico – the name suggests it’s Greek, though no Greek variety has ever been found and you only get it in Southern Italy. Perfect for late ripeness, and not for cool climates – and now it has travelled to Australia, where they’re desperate for hot weather varieties.  The whole array of Portuguese and Greek grape varieties are so fantastic! And so individual. And I love that after a dalliance with international varieties, both countries are now celebrating their own. There’s another white grape, an Iberian variety that’s stunning, and, again, I’m not sure it’s yet been planted much: Godello! It’s a bit crass to say it makes wines that taste like Montrachet, if a little more terroir-y and mineral … but it does. I could drink Cinsault for red and Godello for white into the next century. “There’s such a gap nowadays,” Robinson goes on, “between the Napa Cab thing, and these young people who are buying unknown grape varieties that sell for a fraction of the price, that are really good. Such a lot has happened in the field of recuperating old vines, some so obscure that they don’t even have a name. Miguel Torres, the scion of that great company in northeast Spain became very interested in grapes.  At first, he said, ‘Hey Dad, we need the posh varieties, Cabernet and Chardonnay’ – and made all these wines which did well in the Judgement of Paris. But, with time, he realised that it made more sense to concentrate on the indigenous varieties. He’s been engaged for 30 years, putting classified ads in the local press – ‘If you know of a wine grape that you can’t identify, let us know of it, and – if we think we can propagate out – we’ll do micro-vinification.’ He’s actually rescued Catalan varieties that were on the brink of disappearing; I think he found 30 varieties, and recuperated eight for micro-vinification with sufficient character to give them a new lease of life. And much the same thing has been happening all over Italy. If we published the book today, we’d be up to at least 1,500 kinds of grapes.” The great sorting question of our time, of course, is the question of climate change and its effects on wine cultivation. Robinson is cautiously hopeful about Burgundy. “I was lucky enough to go there and spend some time. The 2020 harvest is the earliest ever, at least since the 14th century. But, whereas the 2003 vintage, that legendary hot summer in France, produced wines that were pretty bizarre, the 2019s seem as fresh as a daisy, with pure fruit. I’m no plant biologist, but the vines seem to be getting used to the conditions … or the winemakers are. They’re not extracting as heavily, but, given that, there’s no sign of added acidity (it’s routinely added in the southern hemisphere), the acidity is coming from the grapes as well. Even some real old Burgundy hands, when you ask why the wines are so fresh, say, ‘I really don’t know.’” About the Southern Rhône, though, she is more pessimistic. “They’re not helping themselves in the Southern Rhône: too many are trying to make concentrated, high alcohol, 16% wines. And maybe consultants are too powerful down there – one consultant can be responsible for 20 or 30 labels, and so you’re going to have 20 or 30 wines that reflect that.” It’s here, though, that the knowledge of grapes, and our possession of this specialist dictionary, seems particularly valuable. If wine is to save itself from the vagaries of climate change, it will probably be through the introduction and new use of ‘marginal’ or forgotten ‘heirloom’ grapes. Only recently, France’s Institut National de l’Origine et de la Qualité (INAO) officially approved six new varieties: four red grapes – Arinarnoa, Castes, Marselan, and Touriga Nacional; and two whites – Alvarinho and Liliorila – all described as ‘well-adapted to alleviate hydric stress associated with temperature increases and shorter growing cycles’, potential saviours of the region against the villain of global warming. All of them, of course, are charted and explicated in Wine Grapes.

In the end, the great strange truth of wine is the truth of life: a thousand vectors press down on us at once – place, history, time, temperature, luck and breeding – and somehow in the intersection we find, or make, our pleasures. The question of type and variation was very different before Darwin who wrote, oddly (or perhaps not so oddly) almost simultaneously with the great classification of Bordeaux, publishing On the Origin of Species in 1859.  (Oddly because his theory would have been true in any other time; not so oddly because the urge to map the world, for the ‘almanac of everything’, was typical of mid-19th century confidence, as Carroll’s satire suggests.) Before Darwin, who loved wine, the fundamental view of the world was that the superintending categories, species and varieties, were the fixed things in the world. Everyone took it for granted that the ‘kind’ the ‘essence’, was the real thing and all the little variants merely particular shades away from it. A grape was a better or worse instance of its variety. Grapes, like apes, were of one fixed sort. Darwin’s great overriding insight was that only particulars exist, and that species and superintending categories are the labile and ever-changing kinds. Every kind of living thing came from somewhere weird and is on its way to somewhere weirder, with a brief stopover at being the thing it is now. The elegance of Pinot Noir is a close cousin of the earthiness of Syrah, one state is simply a moment in the life of the other, and each are moments in the life of the surging, unfixable whole. Wine, braiding through the planet and only coming to rest on a name for a moment in one place, is a bit of scientific epistemology in your glass, the truth of the particular made potable. James Suckling  James Suckling was the first out with part one of his report, published on 15th April, before most people have even touched down in Bordeaux. Based on his tasting of over 900 barrel samples, he is clearly a fan of the 2023 vintage.  “The best show balance and freshness with deep center palates of ripe fruit and a complement of polished tannins,” he writes – saying that he even likes them more than the very highly rated 2022s. He feels they’re more classically built, with “tensioned mouthfeels and energetic finishes” which makes them “so Bordeaux”.  It is, however, not “an across-the-board home run”, with some wines not matching 2022 for quality at the lower level – but “top terroirs and top winemakers delivered terrific-quality wines”. He compares 2023 to the 2019, 2001 or even 1990 vintages for the reds, with lower alcohol and vibrant acidity levels that make them “some of the brightest and liveliest red Bordeaux [he’s] tasted in years”.  In the second part of his report, he added 2016, 1996 or 1995 to his list of comparable years – those with “ripe, balanced fruit and firm tannins with slightly lower alcohol and lower pH”. While some have noted “the inconsistent nature of the vintage”, this isn’t something he agrees with, writing, “I found a very high level of quality”. For him, their “transparency and freshness” made them some of the most enjoyable wines to taste en primeur, comparing them to 2019 for their brightness. The question, of course, is price – and he’s hopeful that producers will get it right. Suckling’s highlights: Canon, Le Pin, Margaux, Pavie, Montrose, Pétrus, Ausone, Cheval Blanc, Cos d’Estournel, Haut-Brion, Hosanna, Lafleur, Latour, Les Carmes Haut-Brion, Mouton Rothschild, Pavie-Macquin, Pichon Comtesse, Smith Haut Lafitte, Trottevieille  Read part one and two of James Suckling’s report, along with his full notes and scores William Kelley – Wine Advocate For Kelley, 2023 is “make or break” for Bordeaux in terms of pricing, warning that if prices don’t drop significantly “difficult times lie ahead”, but he is clear on the quality of the wines: “The best 2023s are just as exciting as the best 2022s”. Running through the growing season, he emphasises how the time between flowering and harvest was typical – meaning that the best combine “the depth, density and ripe tannin of a sunny vintage but also the vibrant, expressive aromas and flavors of a more traditionally ‘Atlantic’ season”. Mildew impacted yields in some instances, but it seems for him that picking dates and sorting were those that influenced the quality of the vintage most. It is “a hybrid vintage” he says – combining characters of both modern, sunny vintages and more traditionally classic years. They offer “fully ripe tannins and suave, seamless mouthfeels” but “vibrant aromas and flavors, evocative of fresh fruits and flowers” – yet are “far from frivolous” with the structure and pH that will allow them to age. Those who picked a little early have produced wines dominated by their tannin, however generally this is a vintage that “tended to amplify the voice of each estate and terroir”. As with last year, individual reviews were divided between Kelley and Yohan Castaing – so there are notes from both. Lisa Perrotti-Brown MW – The Wine Independent Following on from her preliminary coverage, Lisa Perrotti-Brown MW has published her full report. She emphasises the unpredictability of the growing season, a “game of Jumanji” that came with “a roll-of-the-dice element of luck” when it came to rain. While she emphasises that this is not “a ‘classic’ great growing season nor a consistent one”, there are “some classically styled wines at the pinnacles of greatness” that have “emerged from the 2023 Bordeaux jungle”. It is, she says, a “devil-in-the-details vintage”, with these details revealing why some triumphed and others didn’t. She echoes others describing the more classic feel to the year, “delivering fresher, more elegant, energetic styles” that will appeal to more traditional Bordeaux drinkers. Some producers “have potentially produced their best wines ever”. Talking about the mildew threat and its impact on yields, she explains that large estates with the financial means or smaller, family-owned estates that could offer the necessary overtime could both succeed, but others lost more of their crop, and – if diseased fruit was not sorted out – could impact quality, giving “rustic characters to some of the 2023 wines”. It was also key, she notes, to sort out any sunburnt or dried fruit. Other important decisions were picking each parcel when it was perfectly ripe, and avoiding potential dilution – something not all managed. She highlights that the Pomerol plateau and limestone/clay terroirs of Saint-Emilion produced “more winners”, while there are “wines of true greatness” on the Left Bank, courtesy of “herculean efforts” by producers. She ends noting how Bordeaux continues to offer great value at the lower end – “down-right delicious bargains worth seeking out”. Neal Martin – Vinous Neal Martin has rushed out his report ahead of the first releases, rapidly followed by Antonio Galloni (below). Running through the growing season, Martin describes how “Mother Nature kept winemakers guessing”. He tries to clarify the concern over mildew – pressure that varied by microclimate and estate, and was inflated by early media coverage, but the impact of which depended entirely on how producers handled it. He has dubbed it “The Dalmatian Vintage” – writing that it offers “spots of astounding quality”, but that it is heterogenous, and therefore not “a bona fide great vintage”, but putting it firmly alongside 2016, 2020 and 2022 with some “magical wines”. He describes them as more classical in style, not possessing “the opulence and Rubenesque bodies” of 2022, but “more linear and vertical” but with more fruit than 2021, a style that he confesses “appeals to [his predilection”. He highlights a “nascent energy” that he observes in the best wines, and that terroir seems to shine through particularly strongly. He declares it “a great vintage for dry whites”, but suggests the Sauternes fall just short of great (although Suduiraut is one of his top-scorers). Throughout, he highlights how financial resources were key – to spray as and when needed against mildew, to sacrifice yields, to pick and vinify by plot, not to mention precision in the winery. Ultimately, “human decisions were critical throughout” – but 2023 is “bejeweled with a clutch of spellbinding wines”. Neal Martin’s highlights: L’Eglise-Clinet, Margaux, Lafleur, Le Pin, Suduiraut, La Conseillante, Pichon Comtesse, Haut-Bailly, Mouton Rothschild, Haut-Brion, Montrose, Figeac, Cheval Blanc, Ausone Read Neal Martin’s full report, notes and scores on Vinous Antonio Galloni – Vinous Following just behind his colleague Neal Martin, Antonio Galloni managed to get his report out as the campaign started. He attributes the “fine, almost classical, balance” of the wines to the year’s more generous yields, and – like others – notes how the best estates were able to manage mildew pressure to avoid significant impact. The best wines, he says, are “intensely aromatic and perfumed” with “bright acids, red-toned fruit and linear, vibrant tannins” – generally with “very clear markers of place”, although he argues that the weakest 2023s “can feel light and/or vegetal”. For him, the Left Bank was marginally more successful than the Right, with Saint-Estèphe a standout commune in his tastings – declaring the wines “superb, pretty much at all levels”, along with those of Marguax – highlighting Palmer, Margaux and Rauzan-Ségla, in particular.  He disagrees with Martin when it comes to the whites – both dry and sweet: for him the dry whites are “a mixed bag”, while the Sauternes are “the most exceptional group of young wines [he has] ever tasted here”, finding it an “epic vintage” for Sauternes and Barsac. Jane Anson – Inside Bordeaux  For Jane Anson, the 2023 vintage shows the “effortless construction” that Bordeaux does best – “producing well balanced, structured wines that are made to delight over the long term”. She has given all her potential 100-point scores to the Left Bank and feels that it is “a Cabernet Sauvignon year, particularly in the sweet spot of the northern Médoc”.  As with others she notes that, while there are some excellent wines, it is a variable vintage and “in 2023 if you made the wrong choice, you were punished particularly quickly”. She finds Margaux and Pessac-Léognan less consistent than Saint-Julien, Pauillac and Saint-Estèphe.  She praises the “more nuanced, terroir and estate-driven feel to the wines” on both Left and Right Banks, something she favours over the richness of the 2022s. She writes that there will be little need to wait to drink the wines, but “many have the structure to go the distance”.  For her, there are some “exceptional white wines” – “nuanced wines with excellent aromatics”. The sweet whites are richer, yet with bright acidity – wines that she “seriously recommend[s] buying”. Georgie Hindle – Decanter  The Decanter team released their report in sections, with Panos Kakaviatos helping support the heavily pregnant Georgie Hindle. Their extensive coverage of the growing season dives into the complex conditions that defined the year. For Hindle, the wines “set a new tone for fine, controlled and accessible Bordeaux” with moderate alcohols, low pHs as well as juicy, ripe fruit. They combine “finely-integrated tannins” and “plushly textured bodies” of warmer years, with “a raciness, tension, spice, minerality and delicate floral aromatics more commonly found in cooler vintages”, and speak of their appellation and estate.  Qualitatively, she puts it well above 2017 or 2021, yet confesses does not have the consistent quality of 2019, 2020 or 2022; even though some 2023s out-do their 2022 counterparts, with “elegance and energy”. Because of the inconsistency, it is a vintage that earns a 3.75 rating (out of five) for reds, and four for both dry and sweet whites. The best reds, she writes, are “precise, pure and approachable”; that said, “not everyone got it right in 2023” – often those from “less vaunted terroirs” that she admits are “mostly likely to be found outside the sphere of the wines sold en primeur”. Despite that, there are “lovely wines at all price-points”. The highlights we have picked out below combine some of their top-scoring wines, along with their most improved and “under-the-radar” selections.  Decanter’s highlights: Beauséjour, Bélair-Monange, Canon, Figeac, La Conseillante, Léoville Las Cases, Latour, Margaux, Montrose, Palmer, Pichon Comtesse, Vieux Château Certan, Lascombes, Pavie, Monbousquet, Barbe Blanche, Vieux Château St André, La Vieille Curé, De Chambrun  Read Decanter’s reports on the growing season, yields, the style of the wines, verdict and top-scoring wines  Jeb Dunnuck  It seems that the style of the 2023s doesn’t suit Jeb Dunnuck’s palate, feeling they are “ripe yet not massive or incredibly concentrated” and finds there are “divergent styles”, with some closer to the sunny 2019 and some more structured and cooler like 2020. He agrees that: “Yields, blends, pick dates, and luck with mildew and rain all make generalizations regarding 2023 fraught with peril.”  For him the combination of “ripe aromatics, good freshness, and focused, more medium to medium to full-bodied, linear profiles that make the vintage so interesting” – something he attributes to the condensed ripening period at the end of the season. It’s never easy to pick a favourite vintage for drinking now. But producers’ eyes light up when asked, as they think back to the best bottles – and moments. Of course, it’s all a matter of taste. There are collectors who love very mature wines, while others are much more taken by younger vintages, still with a bit of primary fruit. Winemaking has also changed and – while most top Bordeaux is made for the long run – more modern vintages, with more precise viticulture and vinification, are much more approachable in their youth. 
The youngest vintages to enjoy now: 2017, 2013, 2009 + 2003 
Like many Pomerols, with their opulent fruit profile and rounded tannins, Ch. Lafleur can be enjoyed young, admits Lafleur’s cellarmaster Omri Ram. “But it’s like going to a Pink Floyd concert and leaving after the first 10 minutes. It is brilliant – but you miss so much,” he explains. Lafleur’s other Pomerol wine, Les Pensées, comes from clay soils and it is this that makes the wine that much more accessible at a younger age compared to Lafleur, from gravel soils. Ram believes, however, that the 2013 Lafleur is drinking beautifully now, despite its youth. 
Similarly, on the Left Bank, Léoville Barton’s Damien Sartorius believes that while some vintages are better with 30 years of age (2010 or 2016, say), most, especially the in-between, “off” years are best enjoyed younger – and can offer great value. “I’m very happy drinking a Lynch Bages or Poyferré from 2013 today – they’re lovely wines and it’s a lot cheaper,” he says. 
For Ducru-Beaucaillou’s Bruno Borie, choosing what vintage to drink depends on many factors: “When it’s sunny, I like to drink younger vintages. When it is cold and wintry, I prefer mature vintages, but temperature, air pressure, food, and company all plays a part in identifying what vintage to drink.” He believes even a Ducru as young as 2017 is beautiful to drink now. While he thinks the vintage was written off by the press, it is an elegant vintage and already offers great pleasure with food. Bigger vintages, such as 2010, on the other hand, still require ageing. 
Ch. Margaux, while distinctly elegant, has always been a wine built to last and winemaker Philippe Bascaules wouldn’t touch anything younger than 2009 – even the lighter 2011, ’12 and ’13 vintages, he believes, are too young. But 2009 bucks the trend in terms of its approachability: for Bascaules, it has always been enjoyable. It’s “a great wine with exceptional, very creamy texture, opulence, so powerful but not at all aggressive”, he explains. Ch. Rauzan-Ségla’s Nicolas Audebert’s pick of the younger vintages is 2003. “If 2003s are well done – as in not too much – it is extremely nice to drink. Good terroir combined with slow evolution means after 15 years in bottle it is now showing beautifully. Taste it blind and you wouldn’t think it was a such a warm year,” he suggests.
 
Under-rated and excellent now: 2014, 2012, 2011, 2004, 2001 + 1999 
Most agree that the 2001 vintage was underrated on release, drowned out by the fanfare surrounding both 2000 and 2003. “The 2001 is a very nice vintage to rediscover,” explains Audebert. “It disappeared after the hype of 2000, but it certainly has stood up well to the more celebrated vintages.” Similarly, he believes the 2011 shared a similar fate. “After the release of 2010, 2011 suffered, but it is a very nice, interesting vintage. Not showing off, but is very elegant, a very smart vintage and developing slowly.” 
Like many of the top wines of Bordeaux, you have to be patient with Ch. Lafite-Rothschild. “We make wine for the long run,” says the property’s International Director Jean-Sébastien Philippe. For him, a good vintage is a wine that seems to appear younger, the older it gets. Despite the long-term ageing potential of Lafite, the 2004 is a moderately young wine that he believes is great to enjoy now.  “It has always been very classic, but very closed and therefore underrated. With maturity, it has become an amazing wine to rediscover now,” he says. Bascaules also believes 2004 to be one of the more underrated vintages at Ch. Margaux, again because its sits between the two revered years, 2005 and 2003.  “But it’s much better than people think,” he says. “The tannins are now starting to be soft. It is very concentrated, the nose is very open. It’s very complex.” For Bascaules, the 1999 is another wine that has flown under the radar but is at its best now. “It was a very hot vintage, but not very concentrated. Therefore, the tannins are very ripe and soft, the texture is very resolved, yet the nose is still young,” he explains. 
Ram echoes Bascaules in singing 1999’s praises, with the Grand Vin at Lafleur at its peak. “It is drinking beautifully now, if you can find it, and you will get more pleasure drinking ’99 than the 2000 today. It shows beautiful balance, power versus elegance. Density versus lift. All these contradictions of fine wine show really well in the 1999. The 2000 still behaves like a juvenile in comparison.” 
He also loves 2014: “It’s an underappreciated vintage, but it is the last classical vintage in Bordeaux – charming, elegant, sophisticated.” The 2014 Ch. Canon is a perfect example, drinking beautifully now. He also highlights how successful Saint-Estèphe was that year, with lots of great wines to choose from and well-priced for the quality. For Sartorius, there is a lot of value to be found in 2012: “Léoville Las Cases, Ducru-Beaucaillou, at a very good price – they’re so good and deliver so much,” he says. 

At their peak: 2000, 1996, 1995, 1989, 1986, 1985 + 1983 
For Bascaules, Margaux at 20-30 years old is perfect. “1989 is probably drinking at its optimum today,” he says, “as is 1990. The 1985’s nose is tertiary but there is still fruit too. I like a bit of fruit still in the wine. The 1983 is a great wine and great to drink today.”
The 1983 was a classic vintage throughout the Margaux appellation, and much better than the more revered 1982, believes Audebert: “The 1983 in Margaux is much more interesting, whereas the 1982 is in danger of being over ripe.”  He explains that a ripe vintage and high volumes – at that time – was uncommon, and therefore often not something the era’s winemakers were equipped to handle. He argues that this has resulted in some 1982s from Margaux being a bit tired, producing “tapenade, metallic flavours”, and lacking vibrancy. 
Ram’s favourite vintage ever of Les Pensées has to be the 2000 – he explains it was “the first real blueprint” for the modern Les Pensées, when it switched from being a second wine to being an expression of the clay soils at Lafleur. Combine this with the fact that 2000 was a great vintage and you have a superb wine that is symbolic too. 
The 1986 is Lafite’s pick for drinking now. For Philippe, it shows what the estate is capable of: “It is the vintage that can help you really understand Lafite – the emotion and the precision,” he says. 
Wines for the ages: 1955 + 1964 Ch. Canon, 1916 Ch. Ducru-Beaucaillou 
While many Clarets will reach their 50th birthday, some vintages can last even longer. Nicolas Audebert recently tasted Ch. Canon from 1955 and ’64, two fantastic vintages for the château, which were both still drinking beautifully. Bruno Borie more recently enjoyed a 1916 Ducru-Beaucaillou that was still in form. It is a particularly interesting vintage since it was a wine made only by women, as the men were at war.  A lovely note from the cellar master of the time suggests that “the wine might be too powerful, rich and strong for the trade”. “I’m not sure if the trade would feel the same way these days,” laughs Borie. “At 104 years old, it proves it is important to make wines with sufficient structure to pass 100 years. Even today, the wine still has plenty of character.”
