Schrader Cellars is one of Napa’s most decorated producers. The estate’s approach of pairing specific clones with the perfect site to produce the ultimate expression of Napa Cabernet has made it a critics’ darling – and the property is behind some of the most coveted fine wines on the market. To date, Schrader has received an astounding 35 100-point scores.  Schrader Cellers founder Fred Schrader and the estate’s winemaker Thomas Rivers Brown are huge fans of the To Kalon vineyard in Napa’s Oakville and much of the production from Schrader is concentrated on this single site, such is the obsession with the place and conviction in its quality.   To Kalon is home to some of Napa’s oldest vines and best Cabernet Sauvignon. There are more 100-point wines to originate from this vineyard than any other on the planet and many famous names have built their reputation on it. Schrader bottles different clones of Cabernet Sauvignon from this site, highlighting the nuance and personality that Napa Cabernet can achieve.  Stylistically, Schrader’s wines are immense, opulent and plushly textured, underpinned by elegant power. Schrader is high-octane Napa at its finest. It is immediately clear tasting through the range that these are precise wines. High alcohol, high levels of oak, high levels of concentration are all potential red flags when it comes to wine faults (these wines being much more volatile), but these Schrader bottlings are as clean as a whistle.   With a total production of just 2,500 to 4,000 cases each year, this is meticulous winemaking at its finest. It means winemaker Thomas Rivers Brown and his team can keep these high-octane wines protected from potential faults throughout fermentation and élevage, never losing the fruit clarity that so clearly defines these wines.  RBS is made entirely from the Cabernet Clone 337 from Beckstoffer To Kalon. Jason Smith – Schrader’s in-house Master Sommelier – explains that this clone is their most fruit-driven; it can achieve phenomenal levels of ripeness and is known for its bright, fruit-forward style. Tasting the 2017, the wine is super intense, though the power is measured, pulsing with energy that builds beautifully on the palate. The purity of fruit is impressive and the fruit flavours mesh so well with the new oak tones, while a distinct red fruit character dominates. It is beautifully balanced, despite its opulence. Due to Clone 337’s natural style, it spends less time in new oak – around 18-19 months.  CCS is made from Clone 4 Cabernet – also known as the Mendoza clone – in To Kalon. Clone 4 is known for its density on the mid-palate and is much more tannic and extracted than the RBS. The wine really does have a denser core and more intensity compared to Clone 337. The fruit character is also darker and much more brooding. The 2018 still has more to give and is a little clenched at the moment. The warmer 2018 vintage also would potentially emphasise that, but this is also the characteristic of the clone, built for longer ageing.  The Heritage Clone cuvée is made with Clone 31 – the original clone planted by Robert Mondavi in To Kalon. The 2019 is a breath-taking wine. This is perhaps partly due to 2019 being an incredibly expressive vintage, but what is most notable is how the intensity is matched by overriding freshness. The balance of concentration and acidity from Clone 31 (at least in this vintage) really gives the wine a distinct character. It is stunning – and the length is really quite something. Old Sparky is Schrader’s top cuvée – a mix of Fred Schrader’s favourite blocks from To Kalon curated and blended differently each year. To taste the 2012 out of magnum, a wine now with some bottle age, was a rare treat, but also confirmed the precision at work at Schrader. After 10 years in bottle the wine has fully unfurled, the tannins bring structure but are open-knit. The depth is extraordinary. There are the first signs of tertiary development but the aromas are still so pure. It is a heavenly bottle and such is its balance that it is going to age effortlessly, but why resist this any longer, it is perfect now.   Contrasting the three clonal wines side by side, it is undeniable that each of the wines have quite different personalities considering they are all Cabernet from the same vineyard and made by the same winemaker. When it comes to personality, the Heritage Clone bottling really stands out, but matches the other bottlings for its plushness and amazing fruit clarity. Old Sparky, as a blend of clones, also shows how well they can work together. Understanding the effects different clones have on wine flavour, structure, concentration and ageing potential is one more aspect to a wine’s make-up that, while not often so publicly addressed as with Schrader’s bottlings, has played an instrumental part over the last 20 years in building fine wine’s complexity.  The latest vintage from Schrader is released each autumn. BURGUNDY 2021: THE GROWING SEASON After three warm years, 2021 marked a return to the sort of weather traditionally associated with Burgundy – and all its challenges.  The winter was warm and wet – “too warm”, Frédéric Weber at Bouchard told us. He remembers finishing pruning in just a t-shirt in March. The vines started growing enthusiastically, with early budbreak, only to be struck by a cold spell at the beginning of April – as frost struck the whole of France. The nights of 6th, 7th and 8th April were devastating, especially 7th. Temperatures dropped to -8˚C in places – temperatures at which candles, helicopters and wine machines could offer little help.  
Images of the Côte de Beaune littered with a milky way of candles filled social media, and vignerons could do little but pray. For the early-budding Chardonnay, 80% losses were normal, with some producers in Chablis losing everything. The humid conditions, with snow falling, made matters worse – unusually this combination means that lower-lying village sites were less impacted than the Grands Crus (higher up-slope, where more snow fell). Indeed, if producers had lit candles (or “bougies”), the warmth melted the snow, which then froze and the buds were burnt by the morning sun – cruel retribution for trying to protect their livelihood. This severe, black frost (“le gel advectif”, as Florence Heresztyn explained) was savage – caused by a mass of cold air from Siberia. Chardonnay (and therefore especially the Côte de Beaune) was impacted more, as were any earlier-ripening Pinot Noir sites, such as Cazetiers or Combe au Moine. Candles can normally only increase the temperature by 2˚C, however some producers noted how a collective effort could make a difference – with a high-density of candles concentrated on an area. Erwan Faiveley had installed electric wires in their Bâtard-Montrachet and Bienvenue-Bâtard-Montrachet, as used previously in Chablis, which saved their crop in these plots, but other parcels were devastated. As Thibault Gagey of Louis Jadot noted, late pruning could help; one of their long-term growers in Bâtard-Montrachet pruned late and got a better crop, but the damage was still significant. David Duband reported how he also had issues in April with caterpillars which munched on the nascent buds. He had to hire five additional workers for a week to battle their hungry attack. The cold weather continued, with May cold and cloudy. Flowering at Bouchard began on 16th June, in wet and mild conditions that were perfect for oidium (powdery mildew) and downy mildew. Because the weather was so wet, mud prevented tractor access and at Bouchard they hired more people to spray by hand – a luxury not everyone could afford. Producers across the region spent their weekends during the summer spraying their vines when they could, with the disease pressure a particular challenge to anyone working organically or biodynamically. Edouard Confuron estimated he had sprayed four or five times more than in a normal year. There was some localised hail, with a storm in June causing damage in the north of Gevrey-Chambertin, especially in Les Champeaux, said Pierre Duroché and Olivier Bernstein.  
With the wet and cooler conditions, deleafing was important to open up the canopy, reducing disease pressure and exposing the fruit to much-needed sunshine. At Olivier Bernstein, Richard Séguin explained how they deleafed the fruiting zone and kept just one or two bunches per vine, removing any green bunches that remained at mid-véraison.  September saved the vintage, with warm, sunny and mostly dry conditions. With the tiny volumes, this was enough to ripen the fruit – Jacques Devauges at Domaine des Lambrays described it as Mother Nature evening the score, making up for what she’d taken in April.  Harvest dates varied quite significantly – starting from 10th September through to early October. Rain fell on 19th and 20th September, and producers were often divided between picking before and after this date. Generally producers started with Pinot Noir, then moved onto the Chardonnay, and dates were around a month later than in 2020. Jean-Marie Fourrier felt it was important to wait for phenolic maturity – which only arrived after the rain, and Erwan Faiveley argued that it was essential to wait for the dilution from the rain to pass before picking. Given the low yields, the harvest was often shorter – simply because there wasn’t much fruit.  Selection was essential – making a small crop even smaller – but there was some beautiful fruit of both colours. Yields varied, with losses between 50 and 80% – and some parcels (especially of Chardonnay) were blended together due to the tiny volumes at play. BURGUNDY 2021: THE WHITE WINES 
There’s no doubt amongst producers – or tasters – that this is an excellent vintage for Chardonnay. Production levels are laughable – with often the lowest yields they’ve ever seen, at a mere 20% of their normal crop – but the quality goes some small way to making up for the loss. The small crop (reduced by the harsh April frost) had a long season to slowly ripen, developing intense levels of concentration, yet – with cooler conditions than 2018, 2019 or 2020 – retaining amazing freshness and acidity. With the wet summer, disease was an issue: Erwan Faiveley described oidium as “exploding” on the Chardonnay (with levels not seen since 2004). Extensive sorting was essential. He also felt it was necessary to fine with bentonite after pressing to ensure the must was clean; similarly at Bouchard, Frédéric Weber didn’t use the very first free-run and inoculated fermentations this year to ensure they ran smoothly. Others, such as Philippe Abadie at Alvina Pernot and Paul Pernot, emphasised how important it was not to over-press. Most wines were chaptalised this year, often just to bring up 0.5%, with the final alcohol levels sitting between 12.5 and 13.5%.  Guillaume Boillot at Henri Boillot – who has produced a stunning range of wines – describes the whites as “salin”, having “belle matière”. Vibrant and pure, these are tightly wound with cool, white-fleshed fruit character, sometimes with tropical richness, often a mineral, saline thread and piercing acidity.  Due to the tiny volumes produced, oak usage varies this year. Boillot used none, but others have slightly more in the blend – feeling it didn’t need the freshness added by components aged in stainless steel. For Jadot, it was the first year that they used exclusively foudres, the larger barrels reducing the flavour impact of oak on the wine. Erwan Faiveley believes that tasting the whites, you can feel “the struggle in them”, that the vines suffered. Tasting through the exceptional Grands Crus he’s produced, however, it’s hard to see this – and perhaps he’s biased by the challenges of working the vines and crafting the wines in 2021. Comparisons are hard for such a unique year, but 2014 and 2017 were common themes, largely due to the high acidity, quality and ageing potential. Philippe Abadie and Alvina Pernot described it as “classic bourguignon”, while Thibault Gagey at Louis Jadot compared the year to 2011 or 2013, although feels the wines are better than those of the latter vintage. Faiveley points to 2007 – a vintage that has never shut down or, for him, disappointed; for Boillot they’re closest to 2016, but more precise. At Bouchard, Weber is so excited by their potential that he plans to keep them in barrel longer – possibly bottling in July 2023. These are really exciting wines – with a vibrancy and energy that is compelling. The cool and mineral classicism here, with great fruit concentration and balance, should age beautifully.

 BURGUNDY 2021: THE RED WINES 
While there is a clear consensus on the 2021 whites, the reds are more varied in the vintage – but much better than we initially thought. The wines have clearly benefited from additional time in barrel, and most addresses have crafted a flight of elegant, pale-coloured and light-bodied Pinot Noirs. Although there are a few, rare examples of dilute or overly lean wines, this is in the main a return to “old school” Burgundy, with wines of perfume rather than power. The volumes are more generous than for the Chardonnay, but still measly, mostly sitting between 30 and 50% of a normal year’s yield. 
Frédéric Weber at Bouchard felt there were two styles of Pinot Noir in 2021: those from plots not damaged by frost, with normal yields but grapes with thin, fragile skins, prone to grey rot. The fruit from frost-hit sites, meanwhile, came with lower yields, thicker skins and less disease – for the latter he preferred to harvest later, with their higher tannin levels.  
Jean-Marie Fourrier noted that the picking date for Pinot Noir was key, worrying that anyone harvesting before the rain on 19th/20th was playing a risky game when it came to phenolic maturity and might have unripe tannins and vegetal notes.  
In general, Florence Heresztyn of Heresztyn-Mazzini felt it was a vintage, like 2012 or 2013, where producers needed to be attentive and precise at every stage – from the vineyard to winery. Sorting was essential and almost every producer chaptalised – largely used to prolong the alcohol fermentation rather than with the sole purpose of increasing the alcohol level. 

 Beyond this, tactics in the winery were varied – with vignerons often taking opposite approaches. Some producers, such as Bouchard, opted for more whole-bunch fermentation. Winemaker Frédéric Weber explained that the stems were so beautiful that he was happy to include 30-50% on average; the potassium also helped reduce the acidity of the wines, giving – he felt – a better expression of the year. 
The opposite was true of many, including Benoît Stehly at Georges Lignier and Hugues Pavelot. At Olivier Bernstein, the team used 30-40%, much less than in a warmer vintage, as they didn’t feel additional freshness was required, nor were the stems sufficiently lignified; similarly Heresztyn-Mazzini used 30-60% rather than 50-100% to avoid any greenness. While Jean-Marie Fourrier de-stems everything, in 2019 and 2020 he added the stems back into ferments for freshness, but didn’t feel it was necessary in 2021. 
When it came to extraction, the approach was similarly broad. Some felt it was a year to be more delicate, others thought it was a year that required more work to extract the colour and tannin that was in the grapes.  
Maxime Cheurlin at Domaine Georges Noëllat used a warmer – and therefore shorter – fermentation (sustaining 33-34˚C, versus 31˚C normally) to build the mid-palate of the wines. Charles van Canneyt had to buy smaller tanks for the miniscule yields, but the tiny tanks therefore fermented more quickly and he was careful to keep maceration short to avoid risking over-extraction. Similarly, Olivier Bernstein was keen to keep the fermentation short, with a five-day cold soak to extract colour and aromatics, then just 13 additional days on skins before the must was pressed – the fermentation finishing off the skins. 
By contrast, Fourrier opted for more extraction to get everything possible from the fruit. Guillaume Boillot echoed this view, with an additional week of skin contact. He used just pumping over rather than punching down to focus on fruit and aromatics rather than tannin; but at Faiveley, Erwan used more punching down than pumping over. 
Some producers highlighted that the grapes had high levels of malic acid (which has been notably low in recent, solar vintages), meaning that malolactic fermentation had a significant impact on the wines. Both Benoît Stehly and Charles van Canneyt noted how they were verging on severe at first, but after malolactic were open and fruity – totally changing in style. On paper, the pH is quite high for some wines (up to 3.7) – yet there is plenty of freshness, the lighter body and lower alcohol (mostly 13-13.5%) perhaps balancing it out.  
For élevage, some winemakers feel the wines need longer or shorter élevage, or different types of oak, with more or less new or different toasting. Nicolas Potel at Domaine and Maison Roche de Bellene feels that the crunchy character of the Pinot Noir will only be enhanced by a longer maturation in barrel (planning for 24 months versus the normal 12). Boillot opted for no new oak (as for his whites), feeling it would mark the fruit too much; while Maxime Cheurlin used less new oak but higher toast levels to add further complexity – and plans to bottle the wines earlier.  For Domaine Joblot, they felt that more new oak helped round out the lighter wines, using 50% new. At Domaine des Lambrays, Jacques Devauges favoured a slow, gentle toast – a "chauffe blonde" that gives the scent of freshly baked bread. Indeed, Devauges feels the wines have been improving significantly in barrel, offering more concentration and aromatics with each month that passes – something that reminds him of the 2010 vintage. 




Frédéric Weber at Bouchard describes 2021 as “charming”, comparing the wines to those of 2017, with good terroir definition and balance at 13-13.5% – more in line with what used to be “normal” for the region.  Thibault Gagey at Jadot pointed to 2004, 2013 or 2017 as possible similar vintages, but finds it hard to compare – it’s old school but approachable. Marion Raphet added 2014 into the mix, and although the wines are incredibly open now, wonders if they might shut down in bottle. For her, however, it is a year where, “On retrouve la typicité” (they rediscovered Burgundy’s typicity). The team at Tortochot pointed to 2011 or 2001, while Erwan Faiveley looked to 2007 and Florence Heresztyn noted the growing season was reminiscent of 2016.  
Maxime Chuerlin looks further back, feeling it has a similar equilibrium, colour and density to the outstanding 1991 vintage – in no doubt that the balance of the wines will allow them to age. While it’s easy to assume that these paler Burgundies might not be the longest-lived, almost every producer anticipates that 2021 will surprise everyone with its ageability – especially for the top wines. 
Almost every single grower we spoke to used a different approach for the 2021 vintage – but almost all have succeeded, producing vibrant, open and pretty Pinot Noir. It is a year in which careful vignerons could craft exceptional wines that were both light-bodied, yet persistent – with a purity and intensity that is surprising, along with captivating aromatics. As Nicole Lamarche said, “You can have both lightness and concentration.” It is, overall, a year that has surpassed expectations – one that was transformed by producers’ dedication, work in the vineyard, and modern technology and know-how in the winery.

Burgundy 2021: a wine-grower’s vintage

“I met Anselme Selosse when I was 13 and that really entered in my heart. He’s really a special person that changed the world of wine [for me],” Matteo Bisol tells me. It’s perhaps not what you’d expect of the young winemaker who represents the 21st generation of the Bisol family – a family that made their name with, and has become synonymous with, fine Prosecco.  Meeting the iconic Champagne producer – considered by many the pioneer behind the region’s grower movement – has stuck in Bisol’s mind, however. Partly, he believes, because he was at just the right age – partway between child and adult, his mind open to new ideas. “He was always talking about wine as a living thing, you know,” Bisol says. “I got it and I always thought it was very important.” He’s been immersed in the family business as long as he can remember. From the age of 10, he spent his summers working in the Bisol winery. “Once I arrived in the morning five minutes late and my father fired me. And then he hired me again because he didn’t want me to leave, being at home doing nothing,” says Bisol, laughing at the memory.  But Matteo Bisol has left the hills of Valdobbiadene behind, now in charge of his family’s very personal project: Venissa. It was Matteo’s father, Gianluca that embarked on the adventure over 15 years ago – but somewhat by accident. He was visiting the island of Torcello, which is home to one of the oldest churches in Venice – founded in 639 AD. “In front of the basilica, there’s a beautiful garden – a little bit hidden – but he saw some vine leaves,” Bisol explains. “He knocked on the door of the owner and introduced himself.” Gianluca spoke to the woman that owned the garden, who told him that a few of the vines were a local golden-skinned variety – Dorona. And down the rabbit hole, he went…  He started researching the grape and its history – discovering that viticulture had long been a part of life in the Venice Lagoon. For almost 2,500 years, vines had been grown on the islands – an integral element of the region’s culture. Before motors and speedboats, the islands were a three-hour journey from the mainland, so isolated that they had a totally different culture – “a culture based on nature, based on farming”, Bisol explains. Their isolation forced self-sufficiency, with every bit of space on each island used to grow something. With religion integral to Venice and indeed Italy’s history, wine – used for twice daily mass – was an essential part of life.   This history lives on in local nomenclature: one of the islands is called Le Vignole, one was known as Vigna Murata (now Lazzaretto Nuovo), San Francesco del Deserto was previously called Isola delle Due Vigne, a road on Murano is called Via della Vigne. Many islanders made wine, with presses for the fruit of the vines in their back garden or field. But as the islands of the lagoon became less distant, with the zip of an engine, many of the vineyards were pulled up, and those that remained were destroyed by the catastrophic floods of 1966.   After this initial discovery, Gianluca Bisol started seeking out Dorona vines – a quest that Matteo remembers vividly. “Really from the beginning, I was on the boat, with the bicycles on Sant’Erasmo looking for more Dorona grapes,” he says, describing their search for a variety that was – at the time – on the brink of extinction. It was a farmer, Gastone, on the island of Sant’Erasmo who really opened Gianluca’s eyes to working with Dorona. He was one of the last farmers in Venice to still make wine for personal consumption.   “A great person, a very beautiful person and very wise – he introduced us to the Dorona history and to the way he was making the wine in the past,” Bisol tells me. Thereafter, Gianluca hunted down cuttings and eventually –in 2006-2007 – planted 0.8 hectares of Dorona on the island of Mazzorbo.   It was tradition – rather than current fashions – that led them to make a white wine with extended skin contact. The wine had always been made with skin contact, and they decided to push it further, with a month of maceration, extracting as much flavour as possible from the unique variety. They also decided that the wines needed time to find their balance after such a long period of maceration. They considered barrel ageing, but didn’t want to change the profile of the wines with the flavour of oak, so instead opted for concrete – and two years’ élevage. The resulting wines have a fine phenolic grip and distinct mineral, even saline, freshness, with a nutty complexity that is reminiscent of mature white Hermitage, Burgundy or Jura Savagnin and Chardonnay – yet also unlike anything else. It’s this unique character that Bisol feels is why the wine is such a success. “We never tried to fit Venissa in any category… we just make the wine that we feel is the right thing for Venissa grapes,” he says  Since the first vintage in 2010, and when Matteo took over in 2013, they’ve learnt a huge amount. “There are parts of the vineyard – different parcels – that have a lower salt concentration in the soil,” Bisol explains. The more saline soils restrict the yield, producing smaller and even more concentrated berries. It was this discovery that led to the introduction of Venusa, a second wine that is made for earlier drinking, in 2017 and comes from the less saline plots. Of course, with two wines, it means that the already tiny volumes of the top white, Venissa Bianco, are even smaller – with just 2,000 bottles made a year. “It’s such a small vineyard that we know the plants one by one,” Bisol says, with an almost paternal fondness.  With each vintage, as well, they have pushed quality even further – learning how to get the most from the previously almost extinct Dorona. They’ve been making the wine for 20 years, but – as Bisol says – “Twenty years means you made it 20 times. Twenty times is nothing. Every year we see how the wine is responding, and we learn every year more things that allow us to make better and better wines.”  And making wine in this remarkable place, with its salt-soaked soils, is far from easy – something that the flood, or “acquaalta”, of November 2019 brought vividly to life. Although the vineyard is shielded by a wall, it couldn’t hold back the water – and once receded they had to wash the vines one by one with fresh water, and the soil as well, to try to remove the potentially catastrophically high salt content. It was only when the vines emerged from dormancy in the spring that they knew whether or not they’d done enough to save them.  “It also reminded us how resilient this grape variety is, which is actually the resilience of Venice – which has been a city or republic for more than 1,000 years,” Bisol says. The Dorona grape, like the region’s people, has adapted to its surroundings. Fortunately, with the introduction of MOSE in 2020, the city’s barrier system designed to shield it from high tides, flooding hasn’t threatened their crop – and vineyard – since.   It's clear talking to Bisol, that Venissa is much more than a wine. Not only is it a symbol of Venice’s resilience, but a project to preserve the city’s great traditions.The glass bottles come from the island of Murano, but it’s the labels that are particularly special. They work with Marino Menegazzo of Mario Berta Battiloro, the last goldbeater not just in Venice, but Europe – who hammers out a sheet of goldleaf for each and every bottle they produce, from the workshop that once was home to Titian. The design changes each year, with the leaf for each bottle very slightly different thanks to its hand-crafted nature. With Marino Menegazzo in his 70s, and no one to inherit the family business, this tradition – like the Dorona wines – is at risk.  “This part of the history of Venice, it’s an history that is very important and our role at Venissa is really to keep this history alive,” Bisol says. “For us, winemaking is really important, of course my family comes from winemaking, it has a history of 500 years in winemaking. But when we realised the history that was behind this city, behind agriculture and grape growing, and behind all these other handcrafting techniques, it became even more important for Venissa, as our role of preserving the heritage rather than just making a wine… We really believe that preserving our tradition is even more important than winemaking.”   While the family started with just 0.8 hectares on Mazzorbo, they soon started making a red from 2.75 hectares on Santa Cristina (with vines that were previously farmed by the Swarovski family). Now, they’ve planted Dorona on two more islands, harvesting the fruit for the first time this year. Fighting the tide: Venissa’s quest to save Venice’s vineyards

Anyone who’s had the misfortune of tasting a de-alcoholised version knows that alcohol is key to wine. Take it away and it leaves a gaping void in the glass – stripping the liquid of body and flavour. Those attempting to craft alcohol-free alternatives look to make up for its absence with sugar or flavourings, but the results don’t come close to the real thing. And of course the very fermentation process is key to complexity – there’s a reason we aren’t collecting single-site examples of even the finest raw grape juice. But alcohol’s a hot topic – and not just because of any health considerations. Trends and shifts in climate have seen the average ABV (alcohol by volume) inch upwards. Indeed, a report last year from Liv-ex suggested the average alcohol level has leapt almost an entire 1% for both California and Bordeaux since the 1990s. While once 14 or 14.5% might have been the purview only of the New World, it’s rapidly become the norm in Bordeaux. Rising temperatures are one element, as indeed is technology and know-how – harvesting cleaner, riper fruit and more efficient winemaking. Then, of course, there’s the fashion factor – the pendulum swing, arguably driven by Robert Parker, for bold, ripe, sweet and inevitably high-alcohol wines. “He loved that weight, that impression of sweetness,” Paul Hobbs tells me. “We jumped on the wagon – but we didn’t know what we were jumping on.” A cult name, Hobbs crafts some of Napa’s highest-scoring and most expensive Cabernets; indeed, Parker named him his Wine Personality of the Year twice. Born in New York State, the Davis-trained winemaker founded his namesake estate in 1991. He’d started his career at Robert Mondavi (arriving in 1977), working at Opus One and Simi before setting up on his own, with a flurry of personal projects and list of consultancies that has grown ever since. He openly admits that he got caught up in “Parkerisation”, crafting big, bold wines – no great surprise given the scores, and sales, that followed for those who did. But he’s been pulling back in recent years, and has never quite fit the cookie-cutout for the cult Cabernet crew. Ever since he first started making his own wines in the 1990s, he’s championed native yeasts (relatively radical at the time), and no fining or filtering. While he embraces oak, he’s always been aware that it’s the quality of fruit in the vineyard, preserved by operating a flawlessly clean winery, that is key to producing fine wine. Make no mistake that Hobbs makes rich, plush wines – and the alcohol levels certainly don’t sit at 12.5% – but for him there is much more to alcohol than one number. “I didn’t give much thought to it in the beginning,” Hobbs says. “And there wasn’t really much reason to.” When he was at Mondavi, the wines tended to sit at 13.5% – but then they started to go up. “There was a time when 16% was normal,” he confesses with some amazement. “Some of these wines were difficult. They didn’t age. They would get tired,” Hobbs says. “But all that took us time to learn – no one had ever been in that domain before.” He notes that there was “a backlash” in the British press against wines that didn’t please the palates of “the Hugh Johnsons, the Jancis Robinsons and Anthony Roses”; a response he clearly feels was a little unjust. “It’s far more complex than a simple number,” he says. “15 isn’t always 15.” And it’s true – alcohol doesn’t feel the same. How many times have you looked at the label of a wine and been surprised – either for better or worse? Alcohol is one element working in tandem with a wine’s body, concentration and flavour complexity – and there’s no easy figure to tell you how it integrates with these other components. But there’s another key reason why the same alcohol level can seem so different: the nature of the alcohol. The main alcohol in wine is ethanol (a molecule with two carbons), however fermentation produces other types of alcohols – specifically superior or higher alcohols. Often known as fusel oils – from a German term “Fusel” which is colloquial for low-quality booze – these alcohols have three to six carbons in their molecular form and are significantly more viscous (hence “oils”).  While ethanol is pure and relatively neutral, these heavier superior alcohols can – in low volumes – bring flavour, texture and interest. “It’s what makes something more than vodka,” Hobbs explains. Hexanols can add herbaceous aromas; 2-phenylethanol gives a rose-like scent. But they’re also associated with headaches and hangovers. In the world of spirits, these fusel oils are what runs out of the still last – forming the “tails” of distillation, which are used to varying degrees depending on the type of spirit being produced. “Alcohol is alcohol? Well, yes and no,” says Hobbs. It's high numbers of these superior alcohols, he believes, that can make one 15% wine feel clumsy and lumbering, while another – with lower fusel oil levels – can carry the same ABV with ease. The production of these superior alcohols depends on many things – yeast strain, temperature, oxygen availability and acidity. In general, red grapes produce more of the compounds (which is partly why spirits tend to use white grapes as their base). But Hobbs thinks it ultimately comes back to the vineyard: he’s started noticing that if berries are heat-damaged, they produce more superior alcohols. “Our goal is to keep these superior alcohols as low as possible – and that’s just about harvesting not sun-damaged fruit,” Hobbs explains. Under the warmth of the Californian sun, it’s common to get sun damage early in the season, but shrivelled berries tend to fall off nascent clusters of their own accord; more concerning is fruit that can be damaged internally and then won’t go through véraison, which needs to be sorted out. Late in the season, Hobbs and his team look to walk through the vines and cut off any “shoulders” (the side cluster at the very top of a bunch of grapes) that have been exposed. With global warming, this is an increasing threat – and an element of climate change that is only now being considered. If grapes are sunburnt or shrivelled, they tend to struggle with fermentation, and the stressed yeasts produce more of the superior alcohols. “The wine is going to be fat and heavy on the palate,” says Hobbs. “You can lower the alcohol by adding water – but it doesn’t change its personality.” If the fruit is in good shape – he says – you simply don’t have that issue, even at 15.5%. And those wines, provided they’ve got the requisite balance, age amazingly. Rajat Parr (star sommelier turned winemaker) and Jasmine Hirsch (of Hirsch Vineyards) founded In Pursuit of Balance (IPOB) in 2011 to champion lighter wines that they felt “weren’t chasing after ratings from wine critics”. These “new California” wines (Jon Bonné published his book The New California Wine in 2013) tended to have lower alcohols and less oak – following the swing of the pendulum back the other way; an anti-Parker effort in many ways. I attended the last London IPOB tasting in 2016, catching the crest of the wave as the movement called it quits – feeling they’d achieved their aim of building the reputation of an alternative California. Paul Hobbs arguably sits at the opposite end of the California wine spectrum (“Should all wines be 13.5%?” he says to me, “Why is that the magic number?”) – but philosophically, they’re surprisingly aligned. It’s not about the number, it’s about the balance – and Hobbs, like any posterchild of the new California movement, will tell you that the secret lies in the vineyard. The challenge is to farm and pick the perfect fruit – to find the sweet spot between flavour, sugar and phenolic ripeness. As Hobbs says to me, “That’s the dance between man and nature.” Forget the maths; this is farming. A note on the numbers Strictly speaking, the alcohol level on any label isn’t exactly what’s in the bottle. For wines sold in the EU and UK (both those made here and imported), producers are given 0.5% leeway – meaning that what’s on the bottle is generally reflective of its contents. In the US and Australia, however, wines sold domestically can differ by as much as 1.5% from the label – meaning a wine labelled as 14% could be anything from 12.5 to 15.5%. The Macallan has become the most collectable Scotch whisky in the world. It consistently surpasses its own records at auctions and is known the world over as a luxury brand – even by those who know have little-to-no interest in whisky. The Macallan has come an awfully long way in its 200-year history. From its humble beginnings as two stills in a wooden outbuilding, the Speyside distillery has continually grown in size and prestige. Today, the Scottish whisky-maker calls a stunning £140 million state-of-the-art distillery home and continues to release remarkable long-aged whiskies from its vast stocks. This steady supply of exceptional single malts and rare bottlings, including its fabled #263 cask filled in 1926, has secured its reputation as a collectors’ must-have. But just how has The Macallan become such a tour de force and what should you know if you’re looking to add a bottle to your whisky collection? The history of The Macallan Based in Craigellachie in the Highlands, The Macallan distillery was founded in 1824 by farmer Alexander Reid and became one of the few licensed distilleries following the Excise Act of 1923. In 1868, James Stuart took over the distillery and rebuilt it. Stuart ran the site until 1892, when Roderick Kemp, a distilling giant who previously owned the Talisker distillery, took over and led the distillery to success. Kemp’s ancestors managed The Macallan for over a century, greatly expanding the distillery – increasing the number of stills from six to 21 between 1965 and 1975. In 1986, Suntory bought out a quarter of the stocks, with Highland Distillers buying out the rest in 1994. The distillery changed hands again in 1999, when Edrington took control. The Macallan has been largely responsible for the company’s unprecedented growth. Macallan’s reputation was built on the use of Sherry casks. Indeed, until 2004 it used exclusively Sherry casks, but then introduced the Fine Oak series, which was aged in ex-Bourbon and Sherry casks. The Macallan cask programme Today, The Macallan invests more per cask than any other distillery in sourcing, crafting, seasoning and caring for its casks – all under the watchful eye of Master of Wood, Stuart MacPherson. The entire process of creating a Macallan Sherry-seasoned oak cask takes approximately six years. Today, European and American oak are both used. Once felled at the optimum age (100 years for European and 70 years for American oak), the trees are left to air-dry for at least one year before they are cut into staves and transported to Jerez de la Frontera, Spain, where they are air-dried for a further 12 months, then coopered, toasted and Sherry-seasoned. All The Macallan whiskies are natural in colour – with nothing added and the only colour imparted by the long maturation in barrel. The curiously small stills  The Macallan boasts some of the smallest stills in Speyside. At just shy of 13 feet in height, the small and squat shape of the stills enables maximum copper contact and little-to-no reflux, resulting in the characteristically rich, fruity and oily new-make Macallan spirit. The 24 stills are also run incredibly slowly – at a trickle – and Macallan only takes 16% of the final spirit from the stills to fill its casks. When the new £140 million distillery was built in 2018, The Macallan commissioned the famous coppersmith company Forsyths to faithfully replicate the existing stills, down to the last dent. The 24 stills are designed to be exact replicas and the distillery maintains the new spirit will be unchanged. Kirsteen Campbell became the first female Master Whisky Maker in The Macallan’s near 200-year history in 2019. Campbell is squarely responsible for maintaining The Macallan’s distillery character and deciding which whiskies to pull from the archives. She was instrumental in the record-breaking Red Collection – a six-whisky set of superlative single malts, including two of the oldest released by the distillery. Campbell and her team are always looking at future-proofing the distillery, and run various barley trials. Currently, The Macallan uses Concerto barley and its own exclusive strain called Momentum that is grown on the estate and in other parts of Scotland and the north of England. The new £140 million distillery  Inspired by the great wineries across the globe, the Edrington team set out to build a distillery unlike any other in 2011. The project, led by Rogers Stirk Harbour + Partners – the architects responsible for Heathrow Terminal 5 and the Leadenhall Tower, or Cheesegrater, as it has become known – took seven years from idea to launch. It involved up to 400 people specialising in more than 20 different trades and cost £140 million. The result is an architectural marvel and has increased The Macallan’s distilling capacity from 11 million to 15 million litres a year. Easter Elchies House, located on the 485-acre Speyside estate, is still the spiritual home of the brand. At present, the old Macallan distillery, complete with its original 21 stills, has been mothballed but rumours swirl that it might resume production in the not-too-distant future. The Macallan and 007  The Speyside single malt has featured in two James Bond films. It first appeared – very heavily – in the 2012 Skyfall when M and Bond are both seen drinking Macallan. There is also the memorable scene between Javier Bardem’s Silva and Daniel Craig’s Bond when The Macallan 50 Year Old (the 1962 Fine & Rare) gets an extended amount of airtime, balanced in a shot glass on Sévérine’s head. A bottle signed by Bardem and Craig was later sold at auction, raising £9,635 for charity. The Macallan 18 Year Old makes a more understated appearance in the 2015 Spectre, on a table in James Bond’s apartment. The Macallan range The Macallan produces an extensive permanent range of whiskies, which include Sherry Oak (ranging from 12 to 40 years old), Triple Cask Matured (a trinity of whiskies aged 12, 15 and 18 years in European and American Sherry-seasoned casks), Rare Cask (single malts from the distillery’s library of Sherry-seasoned casks), the Masters Decanter Series (including M, M Black, Reflexion and No 6) and the Fine & Rare Collection. Limited releases (Edition, Anecdotes of Ages, Tales of The Macallan) The Macallan is arguably best known for its limited releases. These are one-off bottlings, often collaborations with artists and experts in their fields, and whiskies that are inspired by various stages in the distillery’s 200-year-history. Some of the most interesting limited releases include the 13-bottle Anecdotes of Ages collection. Each bottle of 1967 single malt features imagery of The Macallan Estate, created by British pop artist Sir Peter Blake and photographed by Mary McCartney. Only 322 bottles are available worldwide. The Archival Series is also worth highlighting. First released in 2015, with Folio 1, the series includes 24 individual bottlings that commemorate the distillery’s iconic advertising campaigns from the 1970s to 1990s. Today, a single Folio bottle can fetch upwards of £1,500. The Macallan has unveiled two highly anticipated limited releases over the past two years: the sixth and final Edition, and the first Tales of The Macallan. Prices for the complete Edition series (1-6), and individual Edition bottlings, have been steadily rising. The forecasted price for one of the 350 Lalique-designed Macallan Volume I decanters is £60,000. The Macallan also releases more experimental limited releases, like the Harmony Collection and A Night on Earth. The first Harmony Collection, unveiled in 2021, was the Rich Cacao expression, combining two of life’s pleasures: Sherry-matured whisky and chocolate. The same year, the distillery released its first A Night on Earth whisky, honouring Scotland and its legendary Hogmanay festivities. The seasonal release features illustrations from Japanese-French artist Erica Dorn. Cask #263 Without doubt, the most coveted bottles from The Macallan come from one hallowed cask: #263. The Sherry-seasoned cask, filled in 1926, slumbered for six decades until the precious liquid was filled into a mere 40 bottles in 1986. Of these, 12 were filled into bottles designed by pop artist Peter Blake and 12 were bottled in labels designed by Italian artist Valerio Adami; two were auctioned in blank bottles – one of which was later hand-painted by Irish artist Michael Dillion; and 14 were sold as part of The Macallan’s Fine & Rare Collection. Sporadically, and to great furore, these bottles have appeared at auction. One of the Blake bottles sold for £6,375 in 1991, an Adami fetched almost double that five years later, and another went under the hammer for $75,000 in the late 2000s. After this, things went quiet and speculation about the whereabouts of the bottles was rife – until a bottle of Blake and Adami sold for $1.2m in 2018. Unsurprisingly, this set in motion a veritable maelstrom of activity, and nine bottles have since changed hands. The Fine & Rare Collection The Macallan first launched the Fine & Rare Collection back in 2002, with a modest 37 different expressions. In the years that have followed, this collection has swelled to 57 different vintage bottlings from eight decades in the distillery’s history – making it the largest vintage-dated single malt collection in the world. The oldest bottling in the impressively vast Fine & Rare Collection is from the legendary 1926 vintage. The Macallan Red Collection The Macallan Red Collection is widely seen as the pinnacle of the distillery’s portfolio. Three of the six single malts are the oldest whiskies ever released by The Macallan – or any Scotch whisky distillery, for that matter. The entire collection – named after a colour that has a long association with The Macallan – is aged in Sherry-seasoned casks. The three oldest ongoing expressions (40 Year Old, 50 Year Old and 60 Year Old) join the three guest releases, which are the oldest in the distillery’s history (71 Year Old, 74 Year Old and 78 Year Old). Occasionally a lone bottle or an incomplete set of The Macallan Red Collection becomes available, but to find all six bottles is truly rare and exciting. Collaboration with Lalique on the Six Pillars Collection Over the course of one decade, The Macallan partnered with acclaimed French crystal maker Lalique on some truly memorable and collectable whiskies. In 2016, the Six Pillars set drew to a magnificent close with The Macallan in Lalique 65 Years Old . Only 450 individually numbered bottles were released worldwide. The first release in the collection, which began in 2005, was the 50 Year Old, followed by the 55 Year Old (in 2007), 57 Year Old (in 2009), 60 Year Old (in 2011) and 62 Year Old (in 2014). Everything you need to know about The Macallan

Think of a cocktail. Is vermouth in it? If you’re thinking of a classic cocktail, there’s every chance it is. The Martini, Negroni, Manhattan – I could go on. And on. For whatever reason, vermouth has not always received the recognition it deserves for propping up so many exquisite mixed drinks. In fact, I’d hazard that a fair amount of cocktail lovers don’t know vermouth is in their glass at all, or, if they do, their knowledge of the liquid might be a little patchy. When it comes to vermouth, there are a few things you need to know. Vermouth is an aromatised wine which hails from Torino, Italy. It is generally accepted that vermouth – as we know it, not the kind prescribed by Hippocrates in 400BC for ailments – was invented in the 16th century. In 2019, a Geographical Indication was introduced to protect the style and quality of vermouth from its birthplace, Turin. Under these regulations, vermouth must be made with at least one Italian wine, wormwood must be the predominant flavour and the wormwood used must be grown in Piedmont. The final liquid must also be between 16% and 22% alcohol in order for it to be labelled “Vermouth di Torino”. The two most common styles of vermouth are sweet and dry. The former is red in colour and as such is often called Rosso. This is the style used in your Manhattan and Negroni. Dry vermouth is white (Bianco) in colour and will be used in your classic Martini. Four classic Vermouth-based cocktails The Negroni It might be hard to believe given the Negroni’s current notoriety, but this simple serve of equal parts vermouth, Campari and gin was incredibly slow to catch on. As is often true in cocktail lore, there are a couple of people credited with its invention. The most widely accepted is a Count named Camillo Negroni who asked a bartender at Caffè Casoni in Florence to make his Americano cocktail a touch stronger. They duly obliged and switched the soda water for gin. This is believed to have taken place in 1919. A smaller camp credits a man named General Pascal Oliver Comte de Negroni with the invention of the cocktail in Senegal between 1855 and 1865. Setting aside the inventor for the moment, the Negroni, unrefutably, became de rigueur in the early 20th century – requested across Europe and favoured for its bitterness and alcoholic strength. Orson Welles was a very high-profile fan, famously quoted in 1947 for saying: “The bitters are excellent for your liver, the gin is bad for you. They balance each other.” In the years that followed, the Negroni’s popularity waned when appetites became more saccharine in nature. In the early 2000s, things shifted again as the Negroni began to appear on cocktail menus at some of the best bars in the world. It wasn’t long before the recipe featured in cocktail books and drinks sections of influential titles, such as The New York Times. Fast forward to today and the Negroni is regularly named the most popular cocktail by patrons and bartenders alike. There are countless riffs on the original recipe and an entire week is dedicated to celebrating it. How to make a Negroni 30ml sweet vermouth 30ml Campari 30ml gin Ice Slice of orange (garnish) Pour all ingredients into a glass with ice and stir well. Add garnish. The Manhattan The Manhattan has assumed many guises over the years, making its exact origin a hotly contested subject. Some believe Sir Winston Churchill’s mother was served the first Manhattan cocktail at the eponymous club in New York in the early 1880s. Others question the validity of this claim as she was likely in the UK, pregnant with the future Prime Minister, around this time. Some believe a New York bartender by the name of Black invented the recipe at the Hoffman House. The earliest known record of the Manhattan, in which this name and the recognised recipe, appear is in The Sunday Morning Herald in September 1882. Unhelpfully, some referred to a very similar recipe as a Jockey Club or Turf Club Cocktail. The classic recipe consists of Rye or Bourbon, sweet vermouth and bitters. During Prohibition, it was not uncommon for people to use a different whiskey as the base ingredient. If you substitute American whiskey for Scotch whisky, you have a Rob Roy cocktail. How to make a Manhattan 50ml Bourbon 25ml vermouth 3 dashes of orange bitters Cocktail cherry (garnish) Add all ingredients into a glass filled with ice and stir. Strain into coupe or Martini glass and garnish. The Americano The Americano recipe was invented at Gaspare Campari's bar in Milan in the 1860s. The cocktail of equal parts Campari, vermouth and soda water, was originally named “Milano-Torino” after the principle ingredients’ home towns of Milan and Torino respectively. The simple serve was renamed in honour of its growing fanbase: American tourists. The Negroni recipe was based on the Americano and contains two of the three main ingredients – with the soda water switched for gin. While many associate James Bond with the Vesper cocktail or a Martini – shaken, not stirred – the first cocktail associated with 007 in Ian Fleming’s work was actually an Americano in Casino Royale. It is later written, in A View To Kill, “Bond always had the same thing – an Americano”. How to make an Americano 30ml sweet vermouth 30ml Campari Soda water Slice of orange (garnish) Fill glass with ice, add Campari and sweet vermouth. Top with soda water and stir gently. Garnish. The Adonis A slightly less well-known vermouth-based cocktail, the Adonis was invented in honour of its Broadway musical namesake. The musical, based on William Gill’s novel, first opened in Chicago in 1884 and went on to become the longest-running show of its era. As the name suggests, the story follows a beautiful male statue who comes to life and ultimately opts to return to stone. The first reference to the Adonis cocktail was written in 1887.
