Jean Vesselle's NV Brut Oeil de Perdrix is fabulous. Rich and textured to the core, the Oeil de Perdrix captures the beauty of Bouzy Pinot to the core. Bright chalky notes give the wine its sense of energy and tension. Red berries, stone fruits, chalk, white pepper and crushed flowers are some of the notes that inform the finish. There is so much to like here. Disgorged June 11, 2013.

About This Producer

This ancient estate is located in the Cote de Noirs town of Bouzy and is renowned for its traditional Pinot Noir-based wines. These are hand-crafted gems that reflect the immutable, visceral ties that the family has to its terroir, grapes and wines. Delphine Vesselle, after the untimely death of her father Jean, took over the reins of winemaking in 1998 and has continued to impress with her innate ability to create such unique, elegant and complex wines.

Wine Varietal: Champagne Blend

Three major varieties are used in a Champagne Blend: Chardonnay, which provides a smooth, creamy texture and Pinot Noir and Pinot Meunier, which provide depth and backbone. Most Champagne is non-vintage (NV), produced with grapes from several different vintages. Vintage Champagnes are made in exceptional years and must contain 80% grapes from that year. Champagne, France is the only region permitted to put "Champagne" on the label.

Blanc de Blancs: Meaning "white of white," blanc de blancs Champagne is 100% Chardonnay.

Blanc de Noirs: Meaning "white of red," is 100% Pinot Noir or a Pinot Noir/Pinot Meunier blend.

Rose Champagne: A small amount of still red wine is added during the blending process, creating a rose hue.
