The 2006 Cabernet Sauvignon, a candidate for Cabernet of the vintage, reveals a gorgeous perfume of chocolate, black raspberries, flowers, ink, and graphite, followed by a full-bodied, textured, superbly concentrated wine with terrific purity as well as density. Drink this outstanding 2006 over the next 15-20 years.

A blend of 96% Cabernet Sauvignon, 2% Merlot, 1% Petit Verdot, and 1% Malbec, this wine is unfined and unfiltered and gets 22 months in 100% new French oak. It has a dark red/aubergine hue and is packed full of luscious red raspberry, mint, and dark chocolate bouquet. This Cabernet has velvety yet strong tannins, great dark berry fruit concentration, and an incredibly long finish.

($135; 15.2% alcohol) Saturated ruby. Sexy aromas of cassis, licorice, loam and toasty oak, along with torrefaction notes of bacon, coffee and mocha. Sweet, lush and outsized; a no-holds-barred cabernet with a strong element of chocolatey torrefaction. Has the sheer mid-palate density of material to support its huge, toothfurring tannins. A big boy! Mark Herold was responsible for making these wines through the 2007 vintage, with Celia Masyczek taking over in 2008. Masyczek told me she will seek to make a more refined style.

Very nice wine. Plush mouth feel, great flavors of fruit, spice and a bit of mineral with smooth tannins. Not a fruit bomb, but a nice big wine.

Cabernet Sauvignon is perhaps the world's best known red variety, with its full-bodied, intense profile. An offspring of Cabernet Franc and Sauvignon Blanc, it is the primary grape of Bordeaux's Left Bank (Medoc and Graves regions) and the Napa Valley, but can be found growing all over the world. Typical descriptors for Cabernet Sauvignon are cassis, cedar, mint, black pepper, eucalyptus, and pencil lead.
