The dense ruby/purple-colored 2004 Cabernet Sauvignon Paradise Hills Estate reveals notes of cocoa, coffee, chocolate and creme de cassis. It cuts a bigger swath across the palate than the Merlot, but with no hard edges. Deeply textured and multidimensional with loads of fruit as well as a flawless integration of acidity, alcohol, tannin and wood, this medium to full-bodied, classic Blankiet should continue to drink well for another 15-20 years.

($165) Deep ruby. Vibrant, pure aromas of black raspberry and violet. Sweet, primary and sophisticated, with a lovely lightness of touch for a 2004. Very fresh cabernet with a building finish featuring suave, rich tannins and outstanding length. From fruit picked under more moderate conditions than the merlot, which came in during the heat spike at the beginning of September.

Tight, with spicy currant, herb, cedar, mineral and herbal leather notes. Complex but restrained, this is balanced, yet leaves you hoping for more richness and depth. Needs air.

Decanted for 80 minutes. Still quite primary. A lot of dark fruit, tannins emerge on the finish. Curious what this will be like in a few years.

Consumed at home with my El Pollo Loco. This Blankiet is a good wine, but no way is it a 96RP. Smells like a mid-range cabernet, and is very smooth and well rounded. However, it was also a little heavy and tiring to drink by itself. Drank after a 30min decant, but I don't think it's getting any better. Drink it today. Good but not really memorable or complex. I would only buy this again if it were $40.

Decanted this one and tasted at pop, an hour in and then three hours in. Wasn't all that tasty until three hours- seemed tight and rather dull fruit. After three hours, it really opened. Perfumed nose with floral notes as well as port and cedar. This wine was a good solid cab, but not exceptional like other Blankiet bottles have been. This is drinking fine now and is unlikely to improve but it will last for another 8+.

About This Producer

Located in the western hills of Yountville, in the foothills of the Mayacamas range, Blankiet shares a founding date with Arietta. In 1996, the husband and wife team of Claude and Katherine Blankiet, with the aid of viticulturist David Abreu, and winemaker Helen Turley, created a stable of wines that validate the extraordinary terroir of their 16 acres of vineyards. The first eight vintages were made by Turley, but now the winemaking team consists of consulting oenologist Michel Rolland and winemaker Martha McClellan-Levy.

Wine Varietal: Cabernet Sauvignon

Cabernet Sauvignon is perhaps the world's best known red variety, with its full-bodied, intense profile. An offspring of Cabernet Franc and Sauvignon Blanc, it is the primary grape of Bordeaux's Left Bank (Medoc and Graves regions) and the Napa Valley, but can be found growing all over the world. Typical descriptors for Cabernet Sauvignon are cassis, cedar, mint, black pepper, eucalyptus, and pencil lead.
