Exotic and seductive. Interesting aromas of very ripe plum fruit and hints of rosemary turn to flowers and spices. Full-bodied, with ultrafine tannins and a long orange peel and fruit aftertaste. The best since 1997. 2,080 cases made.

Saffredi was the first important Cabernet from the southern part of the Tuscan coast, but more recent versions have changed in style with the addition of Merlot and Alicante to the blend, as in the 2001 Saffredi. The full ruby color, the intense and penetrating aromas of cassis, plum jam, and kirsch, sweetened and given more complexity by the notes of vanilla and sandalwood of the oak, the Mediterranean warmth and fullness of the flavors, focused, firm, and with a very important energy and length, are all the characteristics of superior grapes and winemaking.

55% Cabernet Sauvignon, 35% Merlot, 10% Alicante The winter between 2000 and 2001 was characterised by mild temperatures. The only moment of suspense was in mid-April when a frost brought panic to the vineyards. The flowering began in mid-May for the Merlot and ended in the last week of May for the Cabernet Sauvignon. Summer was regular through to the late autumn. The harvest was carried out between 16 September and 12 October.23,000 bottles producedAll the Italian wine guides gave Fattoria Le Pupille, Saffredi 2001 the highest points making it become one of the very few wines (9 in all) about which all are agreed.Shiny crimson right out to the rim. Muted nose – still embryonic? The flavour of this wine seems to be struggling to escape its tannic corset. It may eventually become a swan but at the moment it is a surprisingly surly duckling. Tannins and alcohol are there but it’s difficult to discern much else. It doesn’t have the eloquence of so many other Tuscan 2001s. Perhaps, since such praise has apparently been heaped on this vintage of this wine, this was a duff bottle?

Clear, deep ruby purple color. nose of medium + intensity aromas of black fruit (blackberries, black cherries), black pepper, baking spices, leather, grilled meats. Wine is dry, with med alcohol of subtle and elegant integration, med + tannin of velvety and graceful structure, with well balanced acidity, a long pleasant finish and full body. Flavors are true to nose. this wine is at its prime for those who enjoy a classically made super tuscan and left bank bank Bordeaux. Vibrant but elegant. I bought 3 more, it was so well made and received.

Opened for 2 hours prior to drinking; not decanted. Dark red-black color. Aromas of black fruits and some chocolate and spicy oak. On the palate, rich flavors of dark fruits; good balance of acid and tannin. Moderate finish. Very enjoyable now, but probably many years still ahead for near-peak drinking.

Wine Varietal: Cabernet Sauvignon

Cabernet Sauvignon is perhaps the world's best known red variety, with its full-bodied, intense profile. An offspring of Cabernet Franc and Sauvignon Blanc, it is the primary grape of Bordeaux's Left Bank (Medoc and Graves regions) and the Napa Valley, but can be found growing all over the world. Typical descriptors for Cabernet Sauvignon are cassis, cedar, mint, black pepper, eucalyptus, and pencil lead.
