The 1999 Pavie is a candidate for "wine of the vintage". It boasts an opaque ruby/purple color in addition to gorgeous aromas of crushed minerals, smoke, licorice, cherry liqueur, and black currants. The wine is exceptionally pure and multilayered, with stunning texture and overall balance. The tannin level suggests 3-4 years of cellaring is warranted; it should age gracefully for 25+ years. If readers are wondering why Pavie has become so much better under the administration of Chantal and Gerard Perse, keep in mind that yields are one-third of what they were under the previous owners.

Full red-ruby. Highly nuanced nose combines currant, minerals, earth, coffee and mocha. Silky, suave and consistent from start to finish, with sweet, burnished flavors of currant, minerals and tobacco. Complex and flamboyant. Finishes very long and ripe, with lush, firm tannins. Uncommonly satisfying for the vintage.

The 1999 Pavie according to Parker a candidate for "wine of the vintage". Wonderful deep ruby red color with enticing aromas of cherry liqueur and black currants. The 1999 Pavie exceptional. There is minimum tannin. An excellant investment quality wine. Buy more and hold for 10 years. It is a winner!

this is a big boy Bordeaux. a wonderful nose right at the open, followed after a 45 minute breathe by a well balanced mid-palate with notes of dark chocolate, black cherry, tobacco and leather balanced with a nice tanninc minerality. finish is long and huge, this wine is still in its prime but probably mo need to hold further--but will be good for years.

Auction bottle, decanted 3 hours. Rich and deep aromas, plums blackberries and cedar. Medium bodied, not a heavy or coating Pavie, but very nice length, balance and long life.

About This Producer

Chateau Pavie, the largest St.Emilion 1er Grand Cru Classe (Class B), is located on an old peach orchard, known as pavies. Vines have been cultivated at Pavie since the 4th century, making it one of the two oldest estates in St. Emilion. The chateau produces about 15,000 cases per year made from Merlot, Cabernet Franc, and Cabernet Sauvignon. The vines have an average age of 45 years and grow on clay, limestone and sand soils. Chateau La Gaffeliere and Chateau Pavie-Decesse border Pavie's vineyards. The wine undergoes malolactic fermentation in barrel and then ages in new oak. The wine's style is elegant with good depth of fruit on the palate. In recent years, Pavie has become richer and more concentrated. Chateau Pavie also produces a Bordeaux AC rose called La Rosee de Pavie.

Wine Varietal: Bordeaux Blend

Six varieties are permitted to be used in a red Bordeaux blend: Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, Petit Verdot, and, less frequently, Carmenere. Each lends a specific characteristic to the finished blends, most of which are dominated by large percentages of either Cabernet Sauvignon, which brings aromatics and age-ability, or Merlot, which adds softness and body. In the Bordeaux region, Cabernet blends are found on the Left Bank and Merlot on the Right.
