($72; this was racked for the first time in September of 2000, and was bottled in September of 2001) Saturated medium ruby. Explosive, profound aromas of redcurrant, cherry and dark chocolate, complicated by enticing oak tones of smoke and exotic spices. Superripe but not roasted; superrich but impeccably balanced and lively. Red fruit flavors nicely accented by chocolate and minerals. Finishes with terrific persistence. Showing virtually no sign of the recent bottling. Perhaps the most complete red wine made to date by Lafon.

Dramatically deeper colour than most wines. Even the nose suggests hidden depths. Bitter cherries and deep flavours of dank wet stones (I could smell the Lafon cellar when tasting this). Something toasty but still very, very youthful. A baby.

While the Clos des Chênes performed as expected relative to the cask sample, the final Santenots was even better than the cask sample. Wonderfully expressive with massive amounts of spicy black fruit and seductive flavors; the wine has an enormous amount of underlying material and is incredibly complex. But it's the length that defines this wine as it simply goes on and on. It's not hard to see why Lafon believes this is one of the finest wines ever produced at the Domaine. Simply magnificent.

Med.-dark ruby color w/slight amber edge; firm & well structured, rich & concentrated on nose & palate; red fruit dominates with spice, minerals and bacon notes, great balance with good acid level, soft integrated tannins, excellent complexity & depth; long lovely finish.

A year or so off its peak. Still retains most of its fruit and aroma, but lacks depth and finish.

About This Producer

Dominique Lafon has an unwavering loyalty to traditional winemaking, but the flexibility to know when and where progressive techniques are warranted. The vineyards are biodynamic, and wines are barrel fermented, and bottled nearly two years after harvest. Comtes Lafon has one of the deepest, coldest cellars in Burgundy and this has a most positive effect upon the stellar quality of the wines, as it allows for very lengthy, complete fermentations and aging. The result is wines that are made to last and enjoy over decades. As Clive Coates so succinctly states, "[this is] one of the few indisputably three-star white wine estates in Burgundy." Lafon specializes in Premier Cru Meursault and Volnay Pinot Noir.

Wine Varietal: Pinot Noir

Notorious for its fickle growing patterns, Pinot Noir vines prefer long, cool growing conditions and tend to mutate easily, leaving behind numerous clones and inconsistent flavor profiles. Although it is one of the three major varieties used in Champagne production, Burgundy is the traditional home of Pinot Noir. The 30-mile stretch of hills known as the Cote d'Or is valued as the world's premier production area. Pinot Noir is planted all over the world. In the United States, Sonoma, the Russian River Valley, Carneros and the Willamette Valley produce top-notch wines from this variety. Other notable countries include New Zealand, Australia, and Chile. Typical descriptors for Pinot Noir include strawberry, raspberry, cherry, mushroom, and meaty notes.
