Because the Chardonnay was harvested a few days before the black grapes, it managed to escape the damaging rain that hit the Pinot. This is especially noticeable with Billecart, whose N. F. this time is clearly not as good as the Blanc de Blancs. The bouquet is youthful and light, the palate exemplary, pure, and elegant with a big mineral portion.

($120) Yeasty, chalky aromas of baked apple, nutmeg, spearmint and brioche. A rich, toasty midweight, with complex flavors of apple, pear and toffee; strong yeast autolysis character. A very satisfying, vibrant midweight, with moderate dosage and a brisk, dry, enticingly toasty finish. This '95 is already very attractive but has the structure and guts to deepen and last well in bottle.

About This Producer

Billecart-Salmon was established in 1818 by Nicolas-Francois Billecart and Elisabeth Salmon in the town of Mareuil-sur-Ay. It is one of the few Champagne houses still owned by the original family. The house is renowned for its non-vintage rose, but also makes vintage champagnes and a Brut Reserve (a blend of three vintages). Billecart-Salmon farms 30 hectares of its own fruit and purchases grapes from an additional 140 hectares, mostly from the area surrounding Epernay. Production methods are meticulous, including the use of their own cultured yeast and Grand Cru wines are fermented in small, traditional Burgundy casks. The bottles are aged in deep chalky cellars where the constantly cool temperature allows for the production of small, fine bubbles.

Wine Varietal: Champagne Blend

Three major varieties are used in a Champagne Blend: Chardonnay, which provides a smooth, creamy texture and Pinot Noir and Pinot Meunier, which provide depth and backbone. Most Champagne is non-vintage (NV), produced with grapes from several different vintages. Vintage Champagnes are made in exceptional years and must contain 80% grapes from that year. Champagne, France is the only region permitted to put "Champagne" on the label.

Blanc de Blancs: Meaning "white of white," blanc de blancs Champagne is 100% Chardonnay.

Blanc de Noirs: Meaning "white of red," is 100% Pinot Noir or a Pinot Noir/Pinot Meunier blend.

Rose Champagne: A small amount of still red wine is added during the blending process, creating a rose hue.
