Deep, expressive aromas of nut skin, minerals and earth; this has developed markedly on the nose in the past year. Then extraordinarily powerful, thick and concentrated, with huge palate-saturating extract. Like a solid in the mouth, yet with this cuvee characteristic austerity. Power and intensity in a glass. Bold and full of bread dough and apple, with a marmalade note, married to a big, firm structure, it still seems youthful. A brilliant Champagne that should develop beautifully. 6,250 cases made.

Fabulously creamy and nut-toffee-scented in the same style as P. R. '88. Winston is usually a slow starter, which is hardly the case with this vintage. Because the grape composition is secret, it is safe to speculate on the subject. Namely, it appears that the '90 contains slightly more Chardonnay than usual. To me this is a 1990 P. R.! The wine has had an uneven curve of development with some specimens being drab and oxidative, but have patience. I know that this wine will keep and that it will develop into a notability at some point. Three bottles side by side in the winter of 2005 differed greatly. Delightful, most recently.

Disgorged 27 oct 99. Very deep gold. Very full and ripe – very 1990 – only just champagne rather than full-bodied white wine, this one. But then a top tracery of the sort of green refreshment that is so evident in the 1993. Quite rich and almost fat. You can see the Winston Churchill in this one all right. Burly. Should not be attempted without food. Not sure it will last all that long. Very, very long.

One of several 750s from the same source that appear to have been compromised in storage at some point. This vintage of Winston Churchill is spectacular when it's "on." Here, while mousse intensity (visually) and color were age-appropriate, the aromas were weaker and the flavor and texture lacked the depth and focus of the best examples. Became sweeter and broader with an hour's air. It's a testament to the magnificent baseline that we drained this bottle nonetheless.

We decanted this for about 30 minutes before drinking. We found that given the age and the complexity, drinking in white wine glasses was preferred. Drank beautifully and definitely more like a nice white Burgundy, still possessing the structure and acidity to keep it exciting. Well liked by the whole group.

Light golden straw color and lots of bubbles still in this 20 year old champagne. Nice body with hints of brioche and honey on the nose. Improved a lot over the course of dinner when it got some air. Color seemed to darken slightly and revealed hints of honey apple on the palate and the nose. Very nice wine!

Wine Varietal: Champagne Blend

Three major varieties are used in a Champagne Blend: Chardonnay, which provides a smooth, creamy texture and Pinot Noir and Pinot Meunier, which provide depth and backbone. Most Champagne is non-vintage (NV), produced with grapes from several different vintages. Vintage Champagnes are made in exceptional years and must contain 80% grapes from that year. Champagne, France is the only region permitted to put "Champagne" on the label.

Blanc de Blancs: Meaning "white of white," blanc de blancs Champagne is 100% Chardonnay.

Blanc de Noirs: Meaning "white of red," is 100% Pinot Noir or a Pinot Noir/Pinot Meunier blend.

Rose Champagne: A small amount of still red wine is added during the blending process, creating a rose hue.
