A full-bodied, powerful Champagne featuring biscuit and ginger aromas and flavors, picking up a grilled nut character on the finish. Very firmly structured and dry, yet with the flavor intensity and fine texture to match, this is a tour de force. Endless finish.

($150) Pale copper color. Classic Bollinger aromas of controlled oxidation: oatmeal, walnut, sauteed porcini, toffee, beeswax and earth. Rich, leesy and powerful, with flavors of butter, toasted almond and nuts. Densely packed and harmonious. More youthful in the mouth than the nose suggests. Very long and strong on the aftertaste. More mute and more potent than the exotic Grande Année of the same year. The wine has acquired R. D. character by this time and it is difficult to predict how long it will be on top. What further complicates the matter is that this R. D. wine is going to be disgorged several times, which makes it almost impossible to predict the development of the bottle one is about to drink. One guess is that this wine is going to peak two years after disgorging into a normal bottle, and three to four years after disgorging into a magnum. The wine itself has a pronounced house-character, with great masculine fleshiness and mushroom notes combined with dark chocolate and windfall fruit.

About This Producer

Bollinger is considered one the top Champagne houses. Originally founded in 1829 by Jacques Bollinger and Paul Renaudin, it has been the purveyor to the British Court since 1884, as well as several other European kingdoms. Bollinger has a classic, full-bodied style that reflects its Pinot-dominated cuv�es. This house is known for its muscular champagnes and R.D. cuv�es, which are kept for approximately ten years on their yeast lees.

Wine Varietal: Champagne Blend

Three major varieties are used in a Champagne Blend: Chardonnay, which provides a smooth, creamy texture and Pinot Noir and Pinot Meunier, which provide depth and backbone. Most Champagne is non-vintage (NV), produced with grapes from several different vintages. Vintage Champagnes are made in exceptional years and must contain 80% grapes from that year. Champagne, France is the only region permitted to put "Champagne" on the label.

Blanc de Blancs: Meaning "white of white," blanc de blancs Champagne is 100% Chardonnay.

Blanc de Noirs: Meaning "white of red," is 100% Pinot Noir or a Pinot Noir/Pinot Meunier blend.

Rose Champagne: A small amount of still red wine is added during the blending process, creating a rose hue.
