A very slow starter, with perfect balance and wonderful but understated aromas. Everything can be sensed under the blanket that covers this time bomb. Today a massive and multifaceted, youthful fruitiness dominates. In ten years' time this fruitiness will combine with the high acidity to carry Winston to unimaginable heights. Decanting is recommended for the impatient.

Classic, subtly complex Champagne aromas of toast, toffee, citrus peel, and yeasty fresh apple. Rich, full and ripe, with great depth of flavor and truly insinuating intensity. Complex notes of butterscotch and toasted nuts. Ripe, harmonious acids give this remarkably smooth wine excellent backbone for further aging. Extremely long. I rated this wine 93(+?) a year ago, and it has certainly delivered on its early promise. A pinnacle of the '88 vintage. (Frederick Wildman & Sons, Ltd., New York, NY.)

Jeroboam. Disgorged 16 Mar 1999. Much paler than the 1990. Exceptionally lively mousse. Very firm indeed. Nuanced. Lovely layers and subtlety. Rich but dry and savoury. Very fine in every way. No hint of 1988 austerity. A lovely open flower now.

Light to medium green gold color with a tiny pinprick bead. A beautiful but still young and developing nose of buttery bread dough, ginger spice, lemon-lime, and a touch of vanilla. Perfectly balanced with a very long finish. Lemons coupled with nuanced honey and slight nutmeg notes caress the palate. Intense but ethereal and light. Champagne does not get much better than this. Drinkable now but better in five years and will last another 12 to 15.

Wine Varietal: Champagne Blend

Three major varieties are used in a Champagne Blend: Chardonnay, which provides a smooth, creamy texture and Pinot Noir and Pinot Meunier, which provide depth and backbone. Most Champagne is non-vintage (NV), produced with grapes from several different vintages. Vintage Champagnes are made in exceptional years and must contain 80% grapes from that year. Champagne, France is the only region permitted to put "Champagne" on the label.

Blanc de Blancs: Meaning "white of white," blanc de blancs Champagne is 100% Chardonnay.

Blanc de Noirs: Meaning "white of red," is 100% Pinot Noir or a Pinot Noir/Pinot Meunier blend.

Rose Champagne: A small amount of still red wine is added during the blending process, creating a rose hue.
