A blend of 45% Pinot Noir, 35% Chardonnay, and 20% Pinot Meunier, the non-vintage Ayala Brut Majeur is an elegant Champagne -- pale gold with a very delicate mousse. It has a vibrant nose with loads of green plum and just a hint of almonds and gooseberry. On the palate this Brut is very clean and well-balanced with good acidity while retaining a silky smooth finish. A perfect aperitif wine.

Fine bubbles followed by a bit of yeast. Light, not overwhelming and simple. Flavors were subdued and not as complex as I like for the price point. Good for entertaining as it will please a wide variety of tastes.

A flawed bottle may be affected by cork taint, heat (maderized), oxidation, or excessive sulfur. Additionally, some people consider wines tainted by Brettanomyces (Brett), a non-spore forming genus of yeast, a flaw although there is much controversy surrounding the subject.
