Red Cabernet Sauvignon
Producer Notes

Caymus Vineyards was founded in 1972 by the Wagner family in Napa Valley's Rutherford district. The Wagners originally immigrated to the San Francisco Bay area from Alsace in the late 1880s. The winery produces both a Napa Valley Cabernet Sauvignon and since 1975, a Special Selection Cabernet Sauvignon, differentiated by superior fruit and additional barrel aging. The name, Caymus, has dual... More »

Opened and double-decanted two hours before drinking; very little sediment. Color is very dark, a black-red. On the nose, lots of sweet black fruit, vanilla and a little chocolate ... very primary aromas. Some in the group detected a bit of eucalyptus / mint aromas. Big, chewy wine with very primary black fruit flavors and quite a bit of sweet oak / vanilla; went well with a short-rib dinner. While enjoyable now with tannins softening, I think this wine gets better and acquires more aroma and flavor dimensions in 3-5+ years.

Still big, plush and flavorful. Just a beautiful wine. Down to my last couple bottles, but Caymus is so consistent that there is always more to look forward to.

Dark and viscous, powerful nose of currants and blackberry jam, blueberry pie, new wood. This is a monster of a wine on the palate. Acidity, tannin, fruit are all at a high level yet very nicely balanced. The alcohol is the one thing that concerns me here and scorches the palate slightly at 15.2%. Through all this a wonderful sweetness and ripeness of fruit emerges, this is built to last and will reward patience. 96+

You expect Caymus Special Selection Cab to be good, but his wine is fabulous, and it does the 2007 vintage proud. Very approachable now after decating. Good dark fruit, with a hint of vanilla, firm but smooth tannins, and it lingers pleasantly in your mouth with a nice finish. While this will age well, I don't think I can wait.

A flawed bottle may be affected by cork taint, heat (maderized), oxidation, or excessive sulfur. Additionally, some people consider wines tainted by Brettanomyces (Brett), a non-spore forming genus of yeast, a flaw although there is much controversy surrounding the subject.
