    ($328) Pale yellow. Citrus peel, wet stone, flowers and a saline nuance on the nose. Wonderfully ripe, broad and rich but classically dry, with the stony quality currently dominating the middle palate. Best today on the extremely long, grapefruity finish, which opens like a peacock's tail.

    A discreet touch of oak highlights the naturally spicy floral and high-toned orchard and green fruit aromas before giving way to textured, sappy and almost painfully intense full-bodied flavors brimming with both dry extract and ample minerality on the hugely long and impeccably balanced finish. This is a really lovely wine that possesses everything it needs to deliver a first-rate drinking experience with a decade of cellar time. As good as this is, and it is very impressive, it's not necessarily superior to the magnificent PerriŠres though it may require a bit more bottle age to arrive at its peak.

    A dramatic and alluring display of floral perfume rises from the glass of Bouchard 2007 Chevalier-Montrachet, suggesting iris, hibiscus, lemon blossom, and lavender. These segue into lemon oil, white peach, and Persian melon on the palate, tinged with salt and chalk and leading to a buoyant finish of lip-smacking savor, ravishing floral persistence, and hypnotic subtlety. This should be capable of inducing a rapturous trance over the coming decade, and hopefully for longer.

    Not yet bottled.Both complex and fragrant - citrus freshness with nutty and spiced sweetness starting to show. Dry, fine, restrained. More elegance than power. Gentle chalky minerality on the finish. (JH)

    This is focused, with a vibrant structure and a creamy texture framing its lime, peach, quince and chalk flavors. This hangs together beautifully already, yet needs time to really strut. There's fine balance and a lingering aftertaste.

    Wonderful aroma of mineral, lemon zest, orange peel, some white pepper, honey and many white flowers. Slow leg. This has a little bit vegetal smell, but after few years of cellaring, it will disappear. High density. Now it's difficult to enjoy this, but this will flower. Really very fine. Wonderful Chevalier.

Eighty-six hectares of grand and premier cru vineyards. One hundred thirty total hectares in the Cote d'Or. Eighty crus produced each vintage. Two hundred seventy-five years of history. Bouchard Père et Fils is truly an institution in Beaune. The Maison was founded by father and son Michel and Joseph Bouchard in 1731, and the family wine merchant business has grown steadily ever since, taking any opportunity to add to its vineyard holdings along the way. Not to be completely overshadowed by its wines, Bouchard conducts business in the very center of Beaune in the old Chateau de Beaune, whose storied past rivals that of the Maison. In 1995, the Champagne family of Joseph Henriot took control of Bouchard, resulting in improvements in quality, not to mention the addition of more top-level vineyard sites. Reds of particular interest include the flagship Beaune Grèves Vigne de l'Enfant Jésus and the Chambertin-Clos de Bèze. As for whites, the Meursault Genevrières, Meursault Perrières, Chevalier-Montrachet and Montrachet are all great interpreters of their particular sites, exhibiting the many nuances of grand and premier cru Chardonnay.
