    3.5 g/l TA, 3.6 pHHeady nose, round and full and rich and not quite enough acidity for the long term, but not bad. Rich and slightly syrupy. Nice, but there are other wines trying to be like this now. Long. Tonic water, quinine.

    The 2007 Chateauneuf du Pape blanc Vieilles Vignes, it was a tiny crop due to several vineyard diseases, and the result is a wine that is almost off the charts in terms of intensity. Gorgeously rich aromas of roasted raisins, white currants, lychee nuts, exotic fruits, brioche, and spice soar from the glass of this decadently rich, luxuriously concentrated, fabulous dry white. Who can ignore it for the next 3-4 years? It is difficult to find a better white Chateauneuf du Pape than Beaucastel. Much like their reds, their whites are made in a style that is atypical for the appellation. It is put through full malolactic, and one-third is barrel fermented, then blended with the two-thirds that is aged in tank. Extraordinarily rich and honeyed, it is ideal for drinking with intensely flavored culinary dishes.

    This is gorgeous, with a creamy mouthfeel that carries lush papaya, green and yellow apple, chamomile, melon and heather honey notes through the long, salted butter-tinged finish. There's great underlying minerality. Superlong.

    This was freekin' awesome. Like pure nectar balanced by palate-cleansing acidity. Absolutely hypnotic, its flavors unfolded in a most beguiling way as the meal ensued. Deep, smoky and absolutely profound, it took my love of Roussanne to a whole new level. One of only 600 bottles imported to the US, my hand was shaking as I poured out the first glass. A rarity, to be sure, but one that immediately drew me in like a big, warm hug. To those of you lucky enough to possess a bottle of this, drink it now. In a year or two it's going to become oxidized, and won't be drinkable again until 2017. This is one of the great white wines of France, and tonight's performance was fantastic.

Chateau Beaucastel, run by the Perrin brothers, is regarded as one of the best estates of Chateauneuf-du-Pape. At 131 hectares of vineyards, it is also one of the largest estates in the region. It is atypical of the appellation in its production techniques. It is one of three estates to produce and vinify all 13 grapes permitted under the regulations of Chateauneuf-du-Pape. Also, unlike most estates, Beaucastel prefers to use as much Mourvedre in its blend as Grenache. As one of the first estates to practices organic viticulture, Chateau Beaucastel is often criticized for the influence of Brettanomyces, yeast that may contribute animalistic flavors to the wine. They are also controversial for their vinification practice of rapidly heating the incoming must in order to kill bacteria and extract color and flavor from the skins. After maturation in oak casks, the wine is bottled with light fining and no filtration. The house produces several cuvees, the grand vin known as Chateau Beaucastel. Their other wines include Hommage a Jean Perrin, Chateau Beaucastel Blanc, Roussanne Vieilles Vignes. Good values can be had by their Cotes du Rhone, Coudoulet de Beaucastel and their negociant line under the name Vieille Ferme.
