    ($400) Aromas of white peach and crushed stone. Sweet, dense and powerful, with strong minerality giving it a strong sappy quality. The ripeness here is almost exotic, and yet this very sweet, long wine comes off as young today. I'd wait four years. Interestingly, winemaker Philippe Prost believes that the '06s are both riper and more primary than the saline, creamy '05s, and that they need a bit more time in bottle than the earlier set of wines.

    Entices with its floral and citronella aromas, then follows through with macaroon, lime and mineral flavors. These are set against a refined structure and a creamy texture that lends a lighter-than-air feel. The finish goes on and on.

    Mint, talcum, marzipan, and candied lemon dominate the penetratingly high-toned aromas of their 2006 Chevalier-Montrachet, which exhibits a remarkable alliance of textural richness and citric brightness, and a finish of fascinating, low-toned, chalk, stone, citrus zest, and nut oils. For all of the sheer ripeness on display here, there is no sense of superficial sweetness, with fresh lime saturating a palate of formidable density and imposingly ripe pit fruits. And for all of this wine's more than 14% alcohol, there is barely a hint of warmth. It exhibits to an even greater degree than the corresponding Meursault Perrieres a nearly ineffable, for lack of a better word |mineral| character, as well as an uncanny combination of amplitude and elegance; sheer mass yet vivacity. This memorably long beauty should age well for at least a dozen years.

    Prost was, justifiably, extremely proud of this wine and observed that it may be the best |straight| Chevalier that he's ever made. Not surprisingly, this is a good deal more elegant than the Bƒtard with gorgeously pure floral and white fruit, stone and subtle spice aromas that seamlessly merge into the almost painfully intense and vibrant flavors that, like the PerriŠres, possess crystalline purity and huge length. This is a knockout Chevy and if you can find it, don't miss it.

Eighty-six hectares of grand and premier cru vineyards. One hundred thirty total hectares in the Cote d'Or. Eighty crus produced each vintage. Two hundred seventy-five years of history. Bouchard Père et Fils is truly an institution in Beaune. The Maison was founded by father and son Michel and Joseph Bouchard in 1731, and the family wine merchant business has grown steadily ever since, taking any opportunity to add to its vineyard holdings along the way. Not to be completely overshadowed by its wines, Bouchard conducts business in the very center of Beaune in the old Chateau de Beaune, whose storied past rivals that of the Maison. In 1995, the Champagne family of Joseph Henriot took control of Bouchard, resulting in improvements in quality, not to mention the addition of more top-level vineyard sites. Reds of particular interest include the flagship Beaune Grèves Vigne de l'Enfant Jésus and the Chambertin-Clos de Bèze. As for whites, the Meursault Genevrières, Meursault Perrières, Chevalier-Montrachet and Montrachet are all great interpreters of their particular sites, exhibiting the many nuances of grand and premier cru Chardonnay.
