    Bright red-ruby. Ripe black cherry, stone and smoked meat on the nose. Fat on entry, then closed in the middle, showing its structure today. Rather powerful but not especially sweet, hinting at earth, spices and minerals and conveying a chewy impression of extract. Finishes with a tannic austerity and very good length. This one will need five years of bottle aging.

    The overt tannins and somewhat choppy, drying finish of the undeniably concentrated Pavelot 2005 Pernand-Vergelesses Les Vergelesses may well be ascribable to its recent sulfuring. Smoked meat, humus and fresh red fruit aromas lead to a meaty, stony, slightly bitterly herbal, tartly cherry- and rhubarb-infused palate. There is certainly no questioning this wine's formidable concentration.
