    ($50; 15.5% alcohol; from vines planted on fine sand and gravel) Medium ruby. Rustic, exotic aromas of blackberry, violet, gunflint, cured meats and black pepper; very syrah. Then smoky, pliant and creamy-sweet, with fat fruit given shape by ripe, harmonious acidity. Not quite as tight-grained as the Castelli-Knight, but offers lovely inner-mouth aromatic character and enticing sappy fruit. Conveys a distinctly tiny-berry concentration. Finishes long and ripe. This needs bottling.

    Opened @ 7:15, decanted @ 7:30, first pour @ 7:45. 15.5% Deep, black-garnet with mauve at the rim. Big aromas of raspberry, cherry, hickory and game. Fat aromas - lard and glycerine. Initially closed on the palate with fine-grain, persistent tannin. Pepper and smokehouse almonds on the palate with fruit still shy. 8:45 plum coming out with increased savory, smokey bacon notes. Eventually cherry, cedar, earth and more game. Never any trace of the alcohol. Perhaps a little too fat and weighty on the palate, though.

    This one is a question of personal taste. Drinking well now, this is a big (15.5% alcohol) wine that has a bit too much heat for my taste, but the fruit is very good and the tannins are pretty well absorbed.

Pax Mahle produced a wide selection of vineyard-designate Syrahs from Northern California under this label for many years before leaving to begin another project, Wind Gap. Under the Pax label, he utilized indigenous fermentations, minimal handling, unobtrusive use of French oak and bottling without filtering or fining. Great care was always taken in the vineyards to produce the best fruit possible by maintaining the vines on an individual basis and ensuring low yields. In addition to many Syrahs, Pax also produced several white wines including Roussanne, Viognier, and a white blend. In 2009, with the departure of Mahle, the brand was re-named Donelan Wines.
