    Pale strawberry pink with a hint of crimson still.ÿ Very broad andenveloping on the nose - as though one had plunged oneself into a cloudof feathers somehow.ÿ Absolutely lovely texture: creamy and, again,enveloping.ÿ Much more flattering than the firmer 1998 tastedalongside.ÿ Masses of fruit, quite complex fruit already on the midpalate.ÿ Delicate and relatively soft - delicate enough to enjoy on itsown as an aperitif.ÿ Pure pleasure, deeply flirtatious - even though itmay not be the longest-lasting Dom P ros‚.     The 2000 Dom Perignon Rose is a flashy, ripe Champagne that screams Pinot to a degree I have never encountered in another vintage of this wine. A dark, intense color leads to a Chambolle-like nose followed by endless red berries, flowers and spices, all backed up with plenty of muscle, richness and density. The wine continues to blossom on the palate, with utterly beguiling detail, clarity and polish, all qualities that resonate on the rich, expansive finish. The 2000 Dom Perignon Rose is 45% Chardonnay and 55% Pinot Noir, of which 25% is still Pinot. Geoffroy says his goal was to make a statement with the 2000 Dom Perignon Rose; he has done that?and so much more. In fact, the 2000 seems to signal a stylistic shift towards a more important, serious style of rose. This superb wine is not to be missed, but readers should note this is no easygoing rose, rather it is a Champagne that demands serious attention. The 2000 will test the limits of what readers expect from a Dom Perignon Rose, but the wine is simply marvelous. I loved it. This bottle was disgorged in 2008.

Dating back to 1743, Moet & Chandon is the largest and most recognized champagne brand and producer in the world. Dom Perignon, its most famous label, took its name from the Benedictine monk whom legend claims was the first to produce the sparkling beverage we know as champagne. The company was founded by Dutchman Claude Moet, who originally shipped wine to Paris to supply the royal court's growing desire for sparkling wine. The company introduced the concept of vintage champagne in the 1840s and began their popular brand "Brut Imperial" in the 1860s. Today Moet & Chandon is a segment of the international luxury goods brand "LVMH," after merging with Hennessy Cognac in 1971 and Louis Vuitton in 1987. Moet & Chandon also fathered the sparkling wine venture Domaine Chandon in the Napa Valley.
