    ($45) Good full ruby. Aromas of blackcurrant, chocolate, tobacco and mint. Sweeter and deeper than the 2000 merlot, with chewier currant and tar flavors and better vinosity and cut. Here the tannins are more thoroughly buffered. Nicely balanced, fresh cabernet.

    A very good effort for the vintage, the deep ruby/purple-colored 2000 Cabernet Sauvignon exhibits notes of tobacco, sweet red and black currants, supple tannin, and a plump finish. It will not be long-lived, so consumption over the next 5-6 years is recommended. The blends for this vintage includes approximately 83-85% Cabernet Sauvignon with the balance mostly Merlot and perhaps a touch of Cabernet Franc and Petit Verdot.

    When our Cabernet fruit was finally harvested it displayed deep color, dense, extractive flavors and near-ideal sugar/acid levels. The finished wine is softer and more accessible than last year's, with lush ripe flavors of cedar and cassis
