    The 1997 Cabernet Sauvignon does possess high alcohol (14.6%), is made from moderately young vines (11 years), and from reasonable yields (2 tons per acre), but that hardly tells the story. This low acid, formidably endowed blockbuster must be the most concentrated Cabernet Sauvignon-based wine I have tasted in many a year. An opaque black/purple color is followed by a fabulous nose of black fruits, cedar, Asian spices, licorice, and truffle. The wine hits the palate with layer upon layer of highly-extracted, super-jammy, ripe fruit. Low acidity gives the wine an accessibility and sumptuousness that redefine the word |hedonism.| The finish lasts for more than a minute. This is an exhilarating, teeth-staining Cabernet Sauvignon that, remarkably, can be drunk now or cellared for 20-30+ years. An astonishing wine!

    We drank this with my birthday dinner after it decanted almost 2 hours. It had wonderful aromas of cassis, chocolate, mint, toast, vanilla, cedar & coffee. The palate followed with currant, black cherry, spice, vanilla, mint, and coffee. It was a very smooth and silky with just a tiny touch of sweetness. It is mildly tannic, but well integrated and round. It had a long (55 sec) dusty finish. It is an extremely complex and FABULOUS cabernet! It's hard to believe this was 11 years old.

Established in 1978, Greenock Creek is a tiny "boutique" Barossa winery with a production level of only 2,500 cases per year, owned by Michael and Annabel Waugh. Greenock Creek produces Shiraz, Grenache and Cabernet with grapes from two prime growing regions in the heart of the Barossa Valley: Seppeltsfield and Marananga. Michael Waugh makes 100% Shiraz, Grenache and Cabernet; each wine is created with fruit from a particular vineyard block. Yields are low, ridiculously so in the case of the Roennfeldt Road Shiraz and Cabernet blocks, where half a ton an acre is typical from the 60-year-old vines.
