    Saturated dark ruby. Multidimensional, expressive aromas of cassis, plum, violet, licorice, mint, leather and flowers. Juicy, penetrating fruit given thrust and focus by superb acidity. Really uncanny three-dimensional texture and great flavor intensity. Richness currently kept under wraps by powerful structure. Finishes with firm-edged Medoc-like tannins. Perhaps the classiest bottling to date of this wine.

    The 1995 Cabernet Sauvignon exhibits an opaque blue/black/purple color, followed by sweet cassis aromas intermingled with scents of earth, spice, smoke, and grilled meats. This dense, powerful, muscular, concentrated wine provides an enormous mouthfeel. Wineries need more than luck to produce multi-dimensional wines with this concentration, ripeness, sweetness of fruit, and overall intensity and complexity.

    Barnyard on the nose gives way to mocha, blackberry and casis on the palate after 2 hours of air. This is drinking nicely now.

    Dalla Valle's 16-acre estate vineyard is located 400 feet above the valley floor in the Eastern foothills of Oakville near where the Oakville Cross Road intersects with the Silverado Trail. The vineyard is planted to Cabernet and Franc. Dalla Valle makes two wines: an estate Cabernet and Maya, a proprietary blend that usually consists of equal parts Franc and Cabernet. Heidi Peterson Barrett made the 95 Estate Cabernet. 1995 was Barrett?s last vintage at Dalla Valle. After she left, Mia Klein was hired as winemaker. The '95 Estate has a great color with a penetrating bouquet of mint, vanilla, new oak, and cherry/dark fruits with a hint of earth. Still quite tannic but the tannins are acceptable because they are soft and layered. Excellent length. Acidity is starting to peak out through the waves of sweet fruit but regardless this wine is in no danger of decline.

    I think I rated this better before. Is on the backside of its peak. Still a lot of grip to the tannins so it needs to breath. Mellowed out to reveal elegant cab fruit complemented by subtle complexities. Decent length to the finish. Has reached a later |classy| stage.

    When first opened, smelled faintly of menthol and tasted thin and on its way out. 24 hours later, it was completely rejuvenated with nice aroma, classy dark fruit and lively acidity. Definitely long in the tooth, but still drinkable for another 3-4 years.

Gustav and Naoko Dalla Valle bought their family estate in 1982, realizing their vision of producing world-class wine. The first vintages were 1986 for the Cabernet and 1988 for the Maya, which went on to earn a perfect 100-point score from Robert Parker for the 1992 vintage. Naoko Dalla Valle has maintained sole responsibility for the vineyards and winery since her husband's death in 1995. French enologist Michel Rolland consults bi-annually on winemaking and blending decisions.
