Intense and lively, offering a wide range of mint, sage, sandalwood, herb, currant, cherry and spice, with an unusual beefy bay-leaf edge to the flavors. Excellent length and fine balance on the finish.--'81/'91 California Cabernet retrospective.

Medium ruby, with a hint of amber at the rim. Aromas of maple syrup, smoked meat, tobacco, roasted nuts and tarry oak. A shapely, bright midweight, with surprisingly fresh cigar box and mineral flavors. Not quite unctuous but plenty dense, especially considering the large '91 crop. A more rustic style of cabernet than today Togni wines. Finishes with lingering flavor of cherry and spice. From grapes picked late and very ripe, says Togni.

The 1991 Cabernet Sauvignon is another upcoming re-release from the winery's library. It is one of the most unique wines I have ever tasted from Togni. The warm year yielded an abundant crop. At the time, Togni also made a white wine. Because of the size of the crop, the harvest took longer than normal, which meant the red grapes spent a little longer on the vine than they would have otherwise. The 1991 presents an intriguing combination of raciness from the super-ripe fruit, but within the classic Togni framework. Sweet tobacco, camphor, savory herbs, licorice and worn-in leather are some of the nuances that add complexity to the fruit. Layers of liqueur-like sweetness frame the beguiling finish. The 1991 is currently peaking, and it won't last forever, but readers lucky enough to taste this wine are in for a real treat. I have been fortunate to taste the 1991 twice over the last few months, and it has been hypnotic both times.

Stunning nose, mature, classic togni cab, one of his best ever

Wow. This is spectacular. Earthy nose of blueberry on the nose. Balanced sweet tannins on the mid palate and a long finish. After an hour of air this really shows it's stuff and it still has plenty of life left.

This family-owned and run vineyard, founded in 1981, sits near the top of Napa Valley's Spring Mountain. Formerly a producer of Cabernet and Sauvignon Blanc, Togni Vineyards is now concentrated on its estate Margaux-style blend of Cabernet Sauvignon, Merlot, Petit Verdot, and Cabernet Franc. This age-worthy blend reflects Togni's early wine education and influence as a student of Emile Peynaud at the University of Bordeaux. With an annual production of only 2,000 cases, Togni wines are in limited supply and high demand. The estate grown and bottled Cabernet Sauvignon is a juicy combination of black cherry, currant, cassis, and licorice. In addition to the current release each vintage, Togni re-releases a 10-year-old bottling to showcase his wine's true aging potential. A second label, Tanbark Hill, is produced from younger vines on the estate property. Rounding out the portfolio, Togni also makes a sweet red known as Ca'Togni produced from Black Muscat.
