I am an admirer of proprietor Valette, so it has given me no pleasure to write so-so reviews for recent Pavie vintages. I was pleased in this blind tasting to see how strongly both the 1989 and 1990 Pavies performed. Both slightly eclipsed my scores given immediately after bottling. The impressive 1990 Pavie exhibits a deeper, more saturated ruby/garnet color, as well as a sweeter, more expressive bouquet of truffles, Asian spices, black-cherries, and smoked herbs. Full-bodied and powerful, with a meaty, beef blood-like richness, this backward, intense, deep, concentrated, muscular St.-Emilion needs 3-4 more years of cellaring; it should age well through 2018.

Ripe and fresh. Just what it should be. Deep ruby with red hue. Loads of chocolate, vanilla, tobacco and ripe fruit. Full bodied with lots of velvety tannins and a long finish.--1990 Bordeaux retrospective. 12,000 cases made.

Dark purple color -no bricking. Mild bouquet of tobacco and blueberry. Very smooth with soft tannins. Blueberry and cassis on the palate. Medium body. Medium finish. Best bottle I have had. Do not decant.

    Merlot comes thru

Chateau Pavie, the largest St.Emilion 1er Grand Cru Classe (Class B), is located on an old peach orchard, known as pavies. Vines have been cultivated at Pavie since the 4th century, making it one of the two oldest estates in St. Emilion. The chateau produces about 15,000 cases per year made from Merlot, Cabernet Franc, and Cabernet Sauvignon. The vines have an average age of 45 years and grow on clay, limestone and sand soils. Chateau La Gaffeliere and Chateau Pavie-Decesse border Pavie's vineyards. The wine undergoes malolactic fermentation in barrel and then ages in new oak. The wine's style is elegant with good depth of fruit on the palate. In recent years, Pavie has become richer and more concentrated. Chateau Pavie also produces a Bordeaux AC rose called La Rosee de Pavie.
