    Pure Caymus, only on a slightly muted scale. The currant, plum, dried cherry, anise and spicy flavors are neatly layered, and the texture and tannins are smooth and polished. Shows fine balance and depth of flavor.--1988 California Cabernet retrospective.

    The Special Selection Cabernet Sauvignon, which spends significant time in oak, can be one of California's most riveting wines. First made in 1975, there have been some exceptionally concentrated, powerful wines that are still young and evolving (i.e, the 1978, 1976, and 1975). The decade of the eighties produced less profound Special Selection Cabernet Sauvignons, with the exception of the 1984 and 1985. Since then, the wine has moved to less of a blockbuster style, with the emphasis on more elegance, without sacrificing the wine's richness and intensity. I have not tasted the 1989 Special Selection, but both the 1988 and 1987 Special Selection Cabernet Sauvignons are noticeably lighter and less intense than previous vintages. The 1988 Special Selection Cabernet Sauvignon reveals a dark color, plenty of oak in the nose, medium body, very good concentration, and a short, soft finish. I would drink the 1988 over the next 7-8 years.

Caymus Vineyards was founded in 1972 by the Wagner family in Napa Valley's Rutherford district. The Wagners originally immigrated to the San Francisco Bay area from Alsace in the late 1880s. The winery produces both a Napa Valley Cabernet Sauvignon and since 1975, a Special Selection Cabernet Sauvignon, differentiated by superior fruit and additional barrel aging. The name, Caymus, has dual origins: it is both the name of a subgroup of Mishewal-Wappo Indians that lived near the present-day Yountville, and the name of the Mexican land grant known as Rancho Caymus, given to George Yount in 1836, which eventually became the town of Rutherford. The winery maintains 60 acres of Estate Cabernet Sauvignon as well as buys grapes from select Napa Valley growers. The Wagners' goal is to create a balanced wine that is approachable at release, but will improve with bottle age. Caymus takes great care in its vineyard maintenance, farming each block according to the specific needs of its soil type, climate, slope and orientation. The vines are also thinned in order to concentrate the flavor and structure within the grapes. Caymus also produces a white blend called Conundrum, and other small production varietal offerings.
