    ($150) Walnut, hazelnut, butterscotch and a Tokaji-like suggestion of damp stone on the yeasty nose. Brisk in texture, quite dry and distinctly mature, with a nut skin note and slightly sour-edged acidity. But concentrated and firmly structured. A classic dinner table bubbly. Bollinger fans appreciate the mature flavors of this Champagne, but my sample seemed a bit past its best. (Dreyfus-Ashby, New York, NY)

    Disgorged 23 Jul 2001 according to the label and much more relaxed and developed than the 2010-disgorged example enjoyed a few days before, as described in Bollinger RDs. Dark gold. Very, very mushroomy. Dense and much drier than the Pol 1990. Nervy and complex. Wonderfully long. Maybe this would have been better with the oysters than the sweeter Pol. Yeasty and long and dry. So subtle and nuanced. Very nervy.

  • Bollinger is considered one the top Champagne houses. Originally founded in 1829 by Jacques Bollinger and Paul Renaudin, it has been the purveyor to the British Court since 1884, as well as several other European kingdoms. Bollinger has a classic, full-bodied style that reflects its Pinot-dominated cuv‹¨«es. This house is known for its muscular champagnes and R.D. cuv‹¨«es, which are kept for approximately ten years on their yeast lees.
