Patrick Piuze
Patrick Piuze is originally from Quebec but has made an impressive name for himself in Burgundy. Piuze got his start in the wine world under the tutelage of the great Marc Chapoutier in the Rhone Valley. After several years of working in other top wineries around the world, including in Australia, South Africa, and Israel, Piuze returned to his native Canada and started a wine bar in the center of Montreal named "Le Pinot Noir."
Following this two year foray into the restaurant industry, Piuze was determined to return to his true love - winemaking. Heading back to France and settling in Burgundy, he began working for such notables as Olivier Leflaive and Maison Verget before eventually becoming the Maitre de Chai at Maison Brocard. Now producing under his eponymous label, Piuze focuses exclusively on Chablis, sourcing fruit from the different terroirs found in the six Grand Cru and eleven 1er Cru vineyards in the region.
Piuze owns no vineyards, but works as a classic negociant. All of his fruit comes from old vines - between 38 and 80 years old. Piuze utilizes only spontaneous (and therefore very long) fermentations, and all of his wines are aged in neutral oak barrels.
