Scientific methodology prevails at quirky Australian winery Mollydooker, a 1995 creation of husband and wife Sparky and Sarah Marquis. Famed for their consistently high-scoring "Velvet Glove" Shiraz, the Marquis team strives to produce the "velvet glove" palate sensation, a blanket of flavor that covers the palate before the structure is revealed, in all their blends. This process of creating intense color and flavor profiles starts in the vineyard, where growers for Mollydooker employ the trademarked Marquis Vineyard Watering System. The vineyard management philosophy stresses canopy balance and strong, healthy vines in order to produce grapes of maximum Marquis Fruit Weight. This grading system involves numerous tastings during the winemaking process to determine the wine's final bottling destination, based on a percent scale. Only wine graded 60% or higher on the Fruit Weight scale is accepted for Mollydooker labels. The highest graded fruit goes into the Velvet Glove designation, making it a truly profound bottling. Other bottlings produced include The Love Series: Carnival of Love and Enchanted Path, which are blends of Shiraz and Cabernet; The Party Series, also made from Shiraz and Cabernet; and the Lefty Series, made from Shiraz, Cabernet, Merlot, and Verdelho.
