Multi-talented Olivier Bernstein has thrown himself into wine with abandon since founding this estate just east of Mas Amiel in 2003. He has also begun a negociant project in Burgundy, exclusively dedicated to grand cru and top-tier premier cru wines. In both projects, "The aim is to capture ripeness in the fruit just before the acidity starts to drop," as well as to capture a mineral dimension. So far, he is succeeding admirably, and with remarkable consistency. Among the Burgundian insights being applied to the most recent Deveze wines are higher percentage of stems, whole clusters, and shorter macerations.
