Dominique Lafon has an unwavering loyalty to traditional winemaking, but the flexibility to know when and where progressive techniques are warranted. The vineyards are biodynamic, and wines are barrel fermented, and bottled nearly two years after harvest. Comtes Lafon has one of the deepest, coldest cellars in Burgundy and this has a most positive effect upon the stellar quality of the wines, as it allows for very lengthy, complete fermentations and aging. The result is wines that are made to last and enjoy over decades. As Clive Coates so succinctly states, "[this is] one of the few indisputably three-star white wine estates in Burgundy."
Lafon specializes in Premier Cru Meursault and Volnay Pinot Noir.
