($90) Good ruby-red. Sexy huckleberry, black cherry, bitter chocolate and licorice on the ripe, briary nose; more expressive today than the Tanbark Hill. At once creamy in the middle and vinous, with slowly building flavors of kirsch, licorice and chocolate. Lovely ripe acidity adds to the impression of intensity. A juicy, firmly structured wine that finishes with very fine tannins. A classic version of this mountain cabernet.

Displaying a more saturated ruby/purple hue, the 2007 Cabernet Sauvignon Estate offers a sweet perfume of blueberries, black raspberries, black currants, and spring flowers. More open aromatically than on the palate, it reveals medium to full body, and an elegant, finesse-styled personality. Togni's wines always have a Bordeaux-like structure. It is a gracious, savory effort that should age for 20-25 years.
