(a very limited bottling from selected lots of cabernet aged for three to four years in barrel): Good dark red. Musky aromas of dried cherry, licorice and smoke; rich but missing the high notes of Jayson Woodbridge's top 2009 bottlings. Chewy, saline and rich in the mouth but a bit undifferentiated. Finishes with building, dusty, lightly tarry tannins and a lingering note of licorice. A very rich cabernet but I'm not convinced that this vintage began with enough verve to support extended aging in barrel.

The 2007 Cabernet Sauvignon Deep Time is gorgeous. The personality of the vintage is very well suited to the extended time in barrel (40-50 months) Woodbridge gives this wine. All the elements are in the right place. Rich, dark and sumptuous, the 2007 is totally seamless on the palate, yet at the same time, there is more than enough support from the tannins. This is yet another compelling, totally beguiling wine from Jayson Woodbridge. Anticipated maturity: 2014-2027.
