The 2007 Cabernet Sauvignon Signature exhibits a dense ruby/purple color along with sweet tannin, lots of blueberry, boysenberry and black currant fruit, a hint of spring flowers, a medium to full-bodied texture, and a supple, seamless personality. It should drink well for 15 or more years.

Very tightly wound, firm and taut, rich and full-bodied, offering intense mineral, blackberry, plum and currant fruit, with hints of flowers and sage. Ends with gripping tannins, but on the finish the flavors slowly unwind and expand. Needs time. Decant.

Decanted for around 3 hours. Dark color, smooth tannins, well-balanced fruit.

Just not ready yet. Dark inky color and extremely tight. Tannins linger in your mouth for up to 20 seconds. Heavy aromas of Oak, earth, tobacco, and cocoa. Makes me wonder if this bottle will ever be ready. Decanted with Vinturi and let sit in the glass for an hour as I tasted it to see if it improved. It did not. Some have suggested that this is a bottle that needs to sit for a long while, sometimes overnight. After letting the bottle sit out overnight, I tasted it the next morning and it was only marginally better. I think that its interesting that Chappellet has managed to sell out their supply of this wine and that no one has given it a professional tasting yet beyond the connoisseurs guide to california wine. It makes me wonder if Chappellet knew they could sell out a substandard wine on the heels of great 2006 reviews without actually getting a review of the 2007 vintage at all.
Almost 20 hours after opening, the bottle is becoming much nicer, possibly an 85-86 pt wine. The wine leaves you salivating for water as it is so incredibly dry. Furthermore, the alcohol content is front and center. It overwhelms the mouth and nose. Who wants to open a bottle 24 hours ahead of company?
