($70) Vivid yellow. Explosively perfumed scents of ripe pear, apple, green papaya, floral honey and yellow rose. Broad and fleshy, with deeply concentrated orchard and pit fruit flavors and a chewy texture. Becomes smokier with air and gains an exotic nutmeg quality. The long finish strongly echoes the pear and smoke notes. This could handle the richest poultry dishes, or even a sweet Gorgonzola.
