Dominique Laurent is a former pastry chef who, with the 1993 vintage, began producing handcrafted wines. He believes in a non-interventionist style of winemaking which aims to maintain the purity of fruit and reveal the character of the terroir
. He has several categories of wines which include the regional Bourgogne Passetoutgrains and Bourgogne Rouge, the Cuvee Tradition (lighter style wines village wines), Grande Cuvee (village wines from old vines), and 1er and Grand Crus.
