When Paul Hobbs founded his eponymous winery in 1991, he set out to produce small lot, hand-crafted, vineyard designate wines. He began with just three wines - one Chardonnay, one Pinot Noir and one Cabernet Sauvignon.

($45) Hazy gold. Leesy, buttery orange and white peach aromas, with a bright peppery lift. Round and supple, with ripe pit fruit and tangerine flavors, gentle acidity and a suggestion of sweet butter on the back. A distinctly warm, easygoing chardonnay, finishing with good length.

This is still a bit awkward, but rich and concentrated, with smoky, cedary oak now holding an edge over the ripe pear and floral notes. The finish holds a focus on the fruit.

This is a big Chard that I don't usually gravitate toward, but I went back to it a day later and it had really softened up. It's definitely in a buttery, oaky style, so I'd pair it with a nice grilled salmon served in a butter and dill cream sauce, with a slight hint of lemon and capers for balance. And yes, while it's over my personal $30 rule, I'd still purchase and recommend it.

Big nose of pineapple fruit. Nice acidity and balance with the wood at the moment. However the wine is highly extracted and unlikely to age well in my opinion.

Butter and toast. Lemon oil and apple. Slight saline quality. Popcorn and orange. Slight green note -- bay leaf? Banana and cream. Pleasant flavors but lacking in focus -- seems slightly diffused and disjointed. Last 1/3 of the bottle was better, tighter, second day.
