(Bouchard has been separately vinifying this parcel, which at one time was part of Montrachet, since 1992 though the first commercial release was not until 1997) Bigger, richer, fuller, denser and more powerful than the Chevy all underpinned by vibrant, racy, intensely ripe acidity and this just slams into the palate with breathtaking intensity and length that must be experienced to be believed. At this juncture, the La Cabotte is more approachable than the Chevy but it too offers similarly superb underlying material that will take the better part of a decade to fully reveal. A great wine.

($270) Very closed on the nose. Extremely concentrated and sharply delineated, with great spine and cut. Powerfully minerally flavors of stone, chalk and spices. Impressively ripe and chewy; more "important" than the regular Chevalier-Montrachet, with compelling density of material and a kaleidoscopic, palate-staining finish.

The bottom rows of vines in Chevalier, just above Le Montrachet. Until 1992 these were - quite legally - sold as Montrachet by Bouchard. The first la Cabotte was released in 1997.Greenish pale gold. Real sinew - ballerina-like - resonates more than the regular Bouchard Père et Fils bottling. Real Chevalier energy! Yes!!! Real freshness and transparency. A wine that tells a story. Very elegant.

The medium-bodied 2000 Chevalier-Montrachet La Cabotte boasts minerals, spices, and creamed nuts in its aromatics as well as its flavor profile. It is fresh, broad, layered, and concentrated. This densely packed wine is ample, harmonious, and displays an admirably long, delineated finish.
